welcome to simply delicious this iscrispy thank you all for joining me onthis video and in this videos episode Iam going to make something that I havenot made in a very long time and that isbarbecue sauce from scratch so when Iwas growing up in Memphis my mom used touse our barbecue grill quite a bit inthe summer months because obviously itwas 95 200 plus degrees everyday and shedidn’t want to cook in the house so inthe summertime we would eat a lot ofbarbecue and we would eat a lot of fishand this is bringing back some memoriesfor me from my childhood I used to watchmy mom cook because I was enamored withcooking me from a young age and actuallyshe started me out when I was about 8with my favorite meal still today whichis breakfast but today we’re going tomake a savory and we’re gonna make asavory barbecue sauce and this barbecuesauce is sweet and it’s got a little bitof spice to it and it is simplydelicious okay so I don’t have all ofthe things that my mom would use to makethe barbecue sauce like you know abarrel barbecue grill with the charcoalgoing in the wood and the smoke andeverything because she would make hersauce and then she will put it in asaucepan and then she would just stickit out on the grill and get that goodbarbecue smoke flavor in there andeverything would just come together andit would be fantastic but we’re gonnaimprovise so I’m gonna show yousomething that I think that you coulduse and that you would appreciate okayso we’re gonna start off with theingredients okay and oh by the way I gotthis request from one of my subscribersmy friend Josh he sent me a messagetoday and said to me hey Chris do youhave a recipe for barbecue sauce sohere’s my take on it Josh I hope youlike it and try it out and then ofcourse like anything you know thesethings are subjected to you so you makethemthat you want but I would suggest thatyou follow what I’m doing here in thistechnique and then see how it comes outand if you like it don’t mess with itand of course if you want to dosomething differentthat’s your prerogative alright so whatdo we have here pour the sauce let meshow you what I have four ingredientsokay all right so we’re gonna pan downhere and so what we have is some yellowmustard I like to use this brand ofmustard and I’m not gonna say to namebecause they’re not paying me I’m gonnause some brown sugar some dark brownsugar I’m gonna use a little bit ofwhite sugarI’m going to use some onion powder I’mgonna use a little bit of nutmeg I’mgonna use some poultry seasoning and I’mgonna put in a little bit of chilipowder okay and let’s see I got a littlebit of pumpkin spice that’s aninteresting thing I know everybody’slike what yep I’m gonna put that inthere I also have a lemon here that I’mgoing to juice and I have the tomatosauce because this is a tomato-basedbarbecue sauce and to improvise for thebarbecue grill in the smoke I’m going touse some liquid some liquid smoke okayand bring a little heat in there I’mgonna add some red hot sauce okayalright so what I’m gonna do is I’mgoing to move this camera back so youcan see what I’m doing okay there we goso I got a saucepan here that’s nothingin it and we’re gonna put some fireunderneath it bring this up alright sothere we gowe’ve got the heat going in there forthe foot a panand then what I’m going to do here isI’m going to add in this brown sugar andthat brown sugar measurement is about acup and it’s packed and then this is aquarter of a cup of granulated whitesugar okay and then what I’m going to dois I’m going to add mustard in and I’mgonna use my measurement spoons here andwe’ll put in about a teaspoon to startokay because I’m this is a trial thingbecause I usually don’t measure I justgo with it and taste so we’re gonnastart out with one teaspoon of mustardI’m gonna turn this key down because wedon’t want it to cook too fast while I’mthrowing everything in here alright andthen what I’m going to do is add alittle bit of this chili powder and I’mjust gonna give it just so this is add alittle bit of warmth to it not too muchso I will say that’s about mmm probablyabout a half of a teaspoonwe’ll just measure it out something likethat and then what I’m gonna do is I’mgonna use this pumpkin spice now thereason why I’m using this pumpkin spiceis because I went to the store to getsome cinnamon because I like cinnamon inmy barbecue sauce just a little bit nottoo muchthe cinnamon will take over but theywere out so I had to improvise and getsomething with cinnamon in it and thispumpkin spice is just that ok and thenso what I’m gonna do is I’m just goingto open this up a little bit and I’mgoing to add let’s seeI’m gonna use my eighth of a teaspoon tomeasure out this pumpkin spice so justgonna just put that in there all rightthat a whole lot and then let’s see whatwe’re gonna do now is we’re going to putthis over there and we’re gonna addabout the same amount of poultry seatingas well now in that pumpkin spice what’sin it is primarily sentiment but it’sgot a little bit of a little bit ofginger in it and let’s see what else isin there nutmeg and allspice okay soit’s got it all in one so I really maynot need the Nutmeg but we’ll just add alittle bit if I need it I’ll taste itand see where it’s at all right soremember we simply delicious what wewant to do is we want to hit all of thesenses on the tongue so we want to givesweet we want to get spicy we want toget salty – okay and so let’s see herewhat I have not added okay so I’m gonnaadd some onion powder and again this isabout I’m gonna sort of sprinkle this inhere but it’s going to be about on ahalf a teaspoon you’ll say about a 1/2teaspoon okayand let me make sure I put this lid onhere cuz I’m good about knocking stuffover and I don’t wanna lose all my spicethat’s a costume lunch all right let’sturn this down to lowcuz that sugars already cooking down andthen what I’m gonna do is I’m gonna openup this little smokeand I’m gonna add about mmm a half ateaspoon of it into it just to start outbecause remember I’m developing thisliterally as we’re doing this video andI don’t I rather add small amounts andthen add more as necessary and that’swhat I would suggest you do when you’recooking alright because you can alwaysadd but it’s hard to take away okaysomething you can do this but it’s gonnabe a way that you’re going to have to doit so I’ve got about like I said a halfa teaspoon of liquid smoke in here thenI’m gonna add a couple of squirts of hotsauce okay and then I’m gonna add thistomato sauce as well get my handy dandycan opener here okay I think it’s prettymuch open city here yep so just openthis up just pull it back just a littlebitgive me one hand that in hereso he’s gonna stir all this together andthat was a 15 ounce can of tomato sauceokay and so you know so it’s not quite acup just one ounce less of a cup butactually is more than cup it’s almosttwo cups because one cup is he now sisall right so much sugar to kind of likestuck to the bottom with us all rightall right so I’m gonna do now is what Idid with this lemon is I put it in themicrowave for about 15 seconds just toget the juice falling inside of thelemon all right and then what I’m gonnado is I’m gonna roll it here on mycutting board and I’m gonna cut thissmall edge just a little bit of itbecause I don’t want a little bit ofjuice and what I’m gonna do is I’m gonnaremove this seat and I literally justcut this little wedge off here like thisyeah and then so what I’m gonna do isjust take my fork my cleaning Fork ispress it right into the lemon and I’mgonna ream it by going side to side andgetting the juice to just fall down okayand then like I said little goes a longway all rightall right so we got that going y’all andthen we’re just gonna stir this allrightand get us a little stir and we’ll letit come together so what I’m gonna donow is take this fork and give it alittle tastewhoo that’s goodWow okay and it ain’t even cook all theway through so that’s yeah all right soI got it on a low heat and I’m not gonnaclean up hold on spoon so I’ll just meanmess up all our stuff cuz I don’t likedoing it all right so I’m just gonnastir that together and as you can seesee how nice and rich that is all rightso do that’s that’s goodmm-hmm that one more taste and younotice that I didn’t add any salt ohthat’s good that’s good right there andI haven’t even added any salt to it yetthat’s really good mm-hmm okay I likethatall right so let’s make sure we get allof this tomato sauce in here so thisrecipe and it’s just a small amount butlike I said this is a oh that I had themeasurement wrong this is a 8 ounce cupI mean 8 ounce8 ounces of hunt’s tomato sauce oops Isaid the brand oh well and like I said acouple squirts of hot sauce and I didn’tadd the Nutmeg because that there wasnutmeg inside of this pumpkin spicewhich was cinnamon and nutmeg togetherbecause that’s what I like inside of mybarbecue sauce and if some of myco-workers from back in the daythat worked with me at heart and coollyI did a a dinnerI sold some dinners once to raise somemoney and long story short for a tripfor the young people at my church and Iwas selling barbecue chicken dinners andthat made a 7-up cake and sliced it upand at the barbecue chicken and got whatelse I had old spaghetti and I think Imade coleslaw and potato salad as anoption for the side and let me tell yousomething them dinners went so fast andso good that I literally like madeenough orders for what people asked forme come up made enough orders for whatpeople asked for and I’m Dennis was soquick that people were asking me heyKris you got any more of those barbecuemeals and I was like no man you know Ihad already sold them all and they wasdistraught about itwell that barbecue sauce that I made forthat particular dinner was actually thissauce that you’re seeing right now okayso and the barbecue sauce everybody knowthat the barbecue sauce is really theboss in barbecue okay so because youknow if you cook the meat properly cookit till it’s done and not dry then youknow it’s good on its own with its ownflavor but the barbecue sauce is king soand this is a simple barbecue sauceseemed like a lot of ingredients butreally it isn’t and it only takes notime to to bring it together so in atime I started this video you saw me andall those ingredients into this saucepan and basically this sauce is doneokay and I would encourage you to try itand tell me what you think so you’rewatching the video try this barbecuesauceand you know leave me to come in let meknow how yours turned out okay but thisis the recipe so I used eight ounces oftomato sauce a couple of drops ofFrank’s Red Hot Sauce I used 1/8 of ateaspoon of pumpkin pie spice 1/8 of ateaspoon of poultry seasoning I didabout a half a teaspoon of onion powderand a half of teaspoon of chili powderand I put in about what was it a halfyeah I put in a teaspoon a tablespoonyeah a teaspoon of yellow mustard and Iput in a half a teaspoon of liquid smokeso there you aretry this recipe tell me what you thinkand you can put it on your favorite meator whatever it is you have so you gotchicken if you got you know shoulderroast which is my favorite barbecuebecause I like to have sandwiches justjust cut the meat into sandwiches andalso pull it apart and make pulled porkbut you know chicken whatever you wantto
