You can use any filling you like. For a vegetarian option you can use snow pea tips and carrots. Another favourite for my family is shrimp and minced beef filling. Or you can even eat it plain dipped in sweet soya sauce 😊 This recipe yields approximately 20 rolls.
Ingredients:
bbq pork, minced
snow pea tips, diced
2 tablespoon oyster sauce
1 tablespoon corn starch
1 cup tapioca starch
1 cup rice flour
4 cups water
2 tablespoon oil
1 teaspoon salt
Instructions:
1. Rinse and drain snow pea tips.
2. Mince 1 stripe of bbq pork.
3. Dice the snow pea tips.
4. Add 1 teaspoon oil to wok on high heat.
5. Add diced snow pea tips to wok and sauté. Add 1 teaspoon salt and continue to sauté until it wilts.
6. Add minced bbq pork and sauté. Add 2 tablespoon oyster sauce and 1 tablespoon cornstarch and sauté until evenly mixed then set aside.
7. Add 1 cup rice flour to mixing bowl. Add 1 cup tapioca starch. Then add 1 cup cold water and slowly mix and knead together.
8. Add 1 cup of water and stir. Then add 1 more cup of water and stir. Lastly, add 1 cup of water and stir.
9. Add 2 tablespoon oil and stir with ladle.
10. Heat up small non stick pan on high heat. Bottom must be flat. Once pan is hot turn it down to medium then pour half a ladle ** of rice noodle mixture evenly into pan. Cover for 10 seconds then smack it down onto a flat rolling surface.
11. Add your filling then fold up. Fold both ends in and continue to roll up.
12. Repeat for each roll
** this will depend how big the base of your pan is – liquid should form a very thin layer on bottom of flat non stick pan. Using a small pan is ideal as it will be easier to roll up.
If you are planning for a party and want to make a large batch here is the recipe for the rice noodle mixture. This will yield 50-60 rolls depending on the size you are making.
1 bag (400g) rice flour
1 bag (400g) tapioca starch
12 cups of water
4 tablespoon oil
