I don’t have anything smarter to say sowe’ll just call these chipotle chickentacos with avocado cream I like to tryand think up something a little moreclever than that for the little introbut what I can tell you is that theseare super easy I mean I think they’resuper easy there’s like three main stepsafter that it’s all downhill you geteasily prep all this stuff in themorning the day before and then just atthe last minute cook it and it would befantastic burst up chicken cuts seasonand by the way before I start I don’twant my cutting surface to move aroundso using this board I take a paper towelget it a little wet put it underneathit’s an old trick it’s perfect nowchicken thighs I’m a fan I say it allthe time I love a chicken thigh I justthink it’s better it’s more tender andmore flavor so if you don’t like themuse what you want I will use these andthen I’m just gonna turn them cut theminto small pieces then just into a bowllike that and cut the rest I think youneed to remember how you’re servingsomething what I mean is that if you puthuge bites in it’s difficult to detestuff that way I’m gonna serve these onlittle street size corn tortillas solong strips of chicken in that as tenderas I want these to be and hope they willbe you don’t want to take a bite and thewhole thing comes out so small pieceslike this are ideal next we season sonow you get rid of this gross Nessbecause no one likes horrible chickenthis quick washand by the way you don’t always see medo that but I do it so for those of youthat right in and go committee it didn’twash his handsbut we need seasoningsnow look so you know this is what do wedecide to call this place The HideawayNo then The Hideaway we also haveanother place we shoot our house this isour apartment and I have a big spicecabinet there there organizes everythingbeautifully and I can see it all ourspace here is tiny so I thought thiswould be a great way to keep all myspices and seasonings the reality is itis save space but you have to look it Ican’t now just look at the side of thejar and know oh that’s oregano that’swhat I want I got to look at the top ofeverything powder so here’s what I wantI use a little garlic powder I also wantnot chili powder wants your potent achili powder and cumin come on it’s agood way to look at I think this is agood wet chipotle chili powder it’sactually not a bad way right and thesethings were not very much on on Amazonso here there’s there’s an idea if youif you want to reorganize your spacethis is not available we could linkthese all right so let’s do this let’sput some in of each first some of thechipotle chili powder it’s pretty strongyou don’t need too much some cumin mmmlove cumin little garlic powder and thenit needs some oil and you know what I’mgonna use I’m gonna use the official oilof sanli cooking guy chosen foodsavocado oil it’s the best and we lovethem okay a little bit and we mix withyour hand just use your hand just do itand by the way if you don’t like theidea of using your hand for this youhave two options one is of course use aspoon and for those of you that havechildren use the children that you’recooking for them get those little ratsin the kitchen and go hey junior mixthat I don’t like touching chicken getused to it it’s life now you can takethis put at the refrigerator and it’sfine until you want it for our purposesI’m just gonna put it there because wellI’m gonna be using it in the next youknow ten minutes or so I’ll wash my handthen the avocado cream so you get whatyou hope is a nice avocado nice and ripeand you cut it open we’ve done thisbeforeand full around hold your breath andthat’s lovely it’s one pretty avocado soscoop up the inside also known as theflesh which I find kind of creepy getrid of the seed repeat and start tobreak it up sorry for the noise reallyyou want this much ideally you would dothis in like a little blenderlike a bullet or something which I don’thave here so and I should assume thatnot everybody does so if you don’t thisis how you’ll do it you want to get itas smooth as possiblewe don’t want cuacamole not that there’sanything wrong with thatwe want it to be more of an avocadocream so we’ll add a couple things tothat to help smooth out the consistencyand those things will be some nonfatGreek yogurt of course you couldsubstitute sour cream a little milk Ireserve the right to put more in andjuice of about half a line and we mix nothis is looking good so now I’m gonnaadd a little cilantro tiny bit more milkpinch of salt a couple grinds of peppera final mix mmm I can smell the limejuice nice a little tastemmm a little more salt not to make itsalty to make the flavor of the avocadogo from here to here to make the flavorsof the lime go from here to here tobring the cilantro up I say it all thetime salt used the right way shouldn’tmake your food saltyit should just enhance all the naturalflavors of everything else you’re usingI could just eat this like a bowl ofporridge oh my god it’s so good okaychicken done avocado cream done let’scook because I’m using these littlestreet sized corn tortillas corn takes alittle bit longer and I know how fastthe chickens gonna cook so I’ll get oneof those in now and then I can prep itwhen this stuff is ready niceso that’s doing its thing this pan isHawk’s let’s get our chicken yes thatalready has the oil in it but we’ll givethe pan to touch more and some will goinand we could honestly it’s crazy thesmell is amazing this is probably 40seconds away from being ready okay[Music]what’s cool is you can have it made andthen as your friends come over let themdo it give them a pan give them atortilla throw a little chicken in twominutes and they’re eating actually makethat like one minute this is ready killthe heat let’s finish the tortilla inhere get a little bit of this a littlebit of this marinade on it let’s gofirst the tortilla and then of coursewhat could be the star of the showsome of this amazing avocado cream orcrema depending on who you are and whatyou like to say now I know we saidChipotle so I’m gonna add just a littlebit extra of the sauce from a can ofminced Chipotle’s nice now a littlecabbage for crunch of course for crunchand the chicken oh my – any idea howgood that’s gonna be and if you wantjust a touch of cilantro and you’re doneoh my god oh my god oh my god no becauseit’s gorgeoushmm avocado lime Chipotle mm-hmm it’s sorich in flavor it’s so the chickenpieces so tender I mean they cook soquickly they didn’t have a chance to dryout and of course we used to size butthis little bite just that perfectlittle bite I mean I could eat like 40of these you know what good morning hereI haven’t had breakfast yet I’m so damnhappy so what have we learned we’velearned that you should make
