It’s fun & a showpiece for sure, plus it is extremely fun to cook on. This Steak & Shrimp was EPIC! The Marinade recipe is as follows:
Mix together
1 cup tequila (I used blanco)
2 tablespoons lime juice
2 tablespoons orange juice
1 tablespoon olive oil
1 tablespoon grenadine
1 teaspoon rice vinegar
Marinade shrimp for 30 minutes to 1 hour

thank you for stopping by ballistic BBQon today’s video it’s gonna be tonight’svideo I’m cooking up ribeye steaks andshrimp on the fire side grill by SentaraPro let’s get going well first thingsfirst let me introduce you to thisbeautiful fireside girl by Sentara ProI’m buddies with the owner of thecompany and he actually surprised mewith this and wow what a surprise I meanthis is like a centerpiece in mybackyard now and I’m really stoked aboutit I’ve been doing a few cooks on it andsurprisingly enough because I see thisthing you know I get it put together mybackyard I’m thinking you know it’sreally only good for entertainingbecause it’s designed obviously forpeople to be you know standing aroundthere’s 360 degrees but with all thestuff going on because I planned on myfirst video being you know all myfriends standing around it and kind ofhaving like a luau so to speak andobviously that didn’t happen but I’vebeen cooking some dinners on this andit’s actually a lot more versatile thanit lookswe’ll start out with a huge space inhere for your charcoal and or your woodright now I’m burning lump charcoal inhere and a couple small splits ofHickory so this cooking grate right hereis actually 20 and a half inches indiameter so it’s it’s big obviously thisis like a flattop surface going all theway around this grill grate and thediameter from this edge all the way tothe other edge of the I’m gonna call ita flattop is 40 inches the cookingsurface on the flattop so from righthere to right here it’s actually 10inches so that’s that’s pretty big soimagine what I was imagining actually mywife’s birthday is literally in threedays and again I wanted to have thiscool kind of luau thing and I picturedall of us all of our friends standingaround here with cocktails and likeskewers you know cooking our own mealsbut anyway a lot of cooking surface herefrom nowI know there are there well I know ofabout three maybe four other othercompanies that are making similar stylecookers and the one thing that they’relacking and I think this is a great youknow addition is a shelf so this is ashelf going all the way around 360degrees and the Shelf is removable ifyou want to remove it but I think that’scool not only for again having youringredients for your cook sitting on theside but also you know again I’mpicturing you’re having a party andmaybe there’s kids there and a littlekid you know comes up and grabs the edgeof this and that’d be a tragedy sotragedy averted so clean up on this isactually pretty easy down there what I’mgoing to call the front because I haveit pointed at you guys is a kind of atriangular bucket for lack of betterwords and you just pull that out there’sa hole underneath or above that bucketyou just push all the ash and it dropsright in there and yeah you dump it outonce it’s all cool let’s get the cookingso here are the shrimp that I’m going tobe cooking up with the steak nice Ishouldn’t have 15 of those and myinspiration was sort of tequila sunrisefor this marinade so I’ve here one cupof tequila Blanco so this is white twotablespoons of lime juice 2 tablespoonsfreshly squeezed orange juice 1 tbspolive oil 1 tablespoon grenadine 1teaspoon rice vinegar get a little acidin there let’s make this up good enoughwith the shrimp in thereand it smells really good all right I’mgoing to get this off to the side we’llget those big old steaks on the grilljust two beautiful rib eyes so this onehere is one and a half pounds this is1.4 so they’re not tiny guys and I’mactually going to be using adoboseasoning for this so I’m going to gowith a little bit of a Mexican themewith the shrimp that marinade for theshrimp all right now on the girl they goso what I’m going to do again I have allthe charcoal under that side that partof the flattop is screaming hot thispart is it’s not as high so I’m going todo a forward sear on these I’m going toget a nice sear going on on them rightnow probably pull them back to over herethen I’ll finish them on the flattopwell these are resting we’re gonna cookthe shrimpall right let’s check this out look atthat that is beautiful so I’m gonna sitthis right over here now nice so I’ll bechecking the temperature on these theseare really thick sticks I mean there’sclose to two inches thick once they getto the target temp and I’m looking forprobably about 120 or so I’ll move themover and and we’ll finish them off onthis hot flattop serum really good onboth sides and then we’ll get thatshrimp on well these guys are restingall right these guys are probing out andout about 111 I’m going to go ahead givethem a flip just to make sure we get anice even cook and these are lookingjust beautiful through that so againgetting them over there on the flat topsjust gonna have that just beautifulbeautiful crust across the board hereall right these guys are tipping outgood come on here now finish them off[Music]nice all right I’m gonna get these inthe house lightly ten them with foil letthem rest we’re gonna get the shrimp ontook the shrimp out of the marinade justkind of let it drip dry so to speakshook off the marinade I guess smellsreally gooda little adobo this is just a reallygood seasoning but it’s got good stuff Imean it’s got garlic in its pepper somesalt just some really good kind ofMexicans you know seasoning good stuffalright give you guys a flipall right these are looking done I’mgonna get this all plated up with mysteak and I’ll give you guys a try giveme a try I’ll let you look at it so thissmells really good and the cricketssmell it they’re hungry it is dark it’snot really that that late just so youknow it’s probably around 8 p.m. my timeso let’s give this a tryfirst of all I hope you know with thislighting I mean in this dark this looksas good as it looks to me cuz this isgorgeous let’s give this a try this isalways makes me so happy pick it up lookat thatit’s a gorgeous medium-rare what is thisstuff well yeah shrimp beautifulmm-hmm all right let me try some of theshrimp I do love shrimp Cheersyou definitely taste like tequiladefinitely pick up on the citrus mmmthis was good very happy with this I’mgoing to go inside now away from
