theplanetnow in keeping with our uniform cinco demayo series today i’m going to show youhow to maketaco and tequila wings you guys thisrecipeis delicious you’re going to love it ialready knowyou want this on your table on may the5thand i’ll tell you you may put it on yourtable before that and you’re probablygonna put it on your table after thatbut let me tell you you’re gonna love itso i hope you’re in your kitcheni’m already in mine so let’s goall right so here are the ingredientswe’re going to use for today’s recipewe have our published green wise chickenthe star the showgarlic powder kosher salt we’re gonnause some red peppercumin black pepperorange naval orange or you can use someregular orange juicebut i want to use some freshly squeezedorange juice uh a limechili powder paprika cinnamonhoney and um hot sauce louisiana or ptexas pete or uh frank’s andsome tequila now i’m not gonna use uh irarely cook with expensive tequila uhbecauseit doesn’t make sense to cook withexpensive tequila so i typically get alittle uh if i’m gonna use arecipe with some tequila in it i usuallyget a cheaper version now i don’t go allthe way down to thethe poor man’s version but i get acheaper version of tequila i’m not goingtouse uh patron to marinate chicken wingsoruse it as a basting this this justdoesn’t make sense soum now to put it in your margaritas ofcourse you want some good tequila whenyou’re drinking it but for cooking youreally don’tall right so these are the ingredientswe’re going to use so let’s get startedall right so i’ve already measured outour ingredients and cut and cleaned ourchicken i know it looks like a lot butguys stick with me if you have theseingredientsyou want to make sure you lay them outbecause this is what’s going tomake this recipe just fabulous sowhat i have here i have 3 4 cups oftequila8 of a cup of hot sauce the zest of onelimei have a half a cup of honey i have2 teaspoons of garlic powder 2 teaspoonsof chili powdertwo teaspoons of smoked paprika twoteaspoons ofsalt i have an eighth of a cupof orange freshly squeezed orange juiceeighth of a cup of freshly squeezed limejuiceone teaspoon of black pepper oneteaspoon of cuminhalf a teaspoon of red pepper and a halfa teaspoonof cinnamon so these are the ingredientsso let’s go ahead and get startedalright guys so what i’m going to do isi’m just going to go ahead and combineall eight of our dry ingredients i’mjust gonnadump them in one of these dishes solet’s just take our chili powderdish right here we dump everything inthere so we’ll take our garlic powderdumping thatwe shouldn’t um shouldn’t overloadtake our kosher saltsmoked paprika our cuminblack pepper cinnamon andour red pepper and we’re going to givethis a good mixlike thismake sure you combine it wellthis is what we have so let’s move onyou want to take a tablespoon of thissauce i mean tablespoon of the seasoningand reserve it on the side and we’ll umwe’re going to use the rest of it toseason our chicken solet’s move on all right so let’s goahead and get these chicken piecesseasoned nowthis is a lot of seasoning uh so it justdepends on how much ofum this chicken you have so i’m gonnastart off with about a tablespoonfor mine you want to kind of eyeball itgot a lot of chicken this is aboutmaybe about a pound and a half to twopounds of chicken soif you got more than that you candefinitely use more of this seasoningbutwe’re going to start off with atablespoonand again you know how i like to do it ilike to eyeballmy meatjust to see how much seasoningi want on it so i’m gonna add just alittle bit more not quitea tablespoon maybe another half atablespoonthen i do reserve some of the rest ofthis foranother recipe so this seems like thisis going to be enough for meso i’m going to give this a good mix weshould be good to go all right so let’sgo ahead and get these transferred overto our baking sheet all right so i’vealready lined our baking sheet withaluminum foilnow i’m going to spray it with somecooking spray that wayour chicken doesn’t stick to our gratesand also the aluminum foil helps foreasy cleanupokay all right so let’s go ahead andmove to the next step and we’re going tostart placing these chicken piecesonto our pan like skin side downhalf an inch to an inch apart try not toovercrowd your panalright so this is what we have so let’smove onright so i’ve already preheated our ovento 400 degreesand we’re going to let them cook for 45to 50 minutesnow i typically keep my wings in therefor aminimum of 45 minutes typically i do itfor about 50 minutes becausei like mine a certain uh texture whichiscrispy so you can leave yours if younormally cook your wings for 3030 minutes or 35 minutes hey be my guesti don’t cook my thatthat short of a time because i likecrispiness in mine i don’t like softskin soum you can you know you can uh leave itin there as long asless time as you you feel comfortablewith but i leave mine in there for 45 to50 minutes sobut we’re going to turn them overhalfway through the cooking processall right so let’s go ahead and do thatand i’ll be right backand we’ll start preparing our sauce allright so we’re gonna go ahead and startpreparing our sauceso the first thing we’re gonna do iswe’re going to add our tequilaand our hot sauce our orange juicelime juice our honeyour lime zest andour tablespoon that we reserved of ourtaco seasoningand we’re going to bring this to a boilall right so now it looks like it’scoming to a boiland as soon as you see it hits thathitting that boiling temperatureyou want to go ahead and reduce yourheatdown to low and you want this to cookfor about20 minutes on low all right so now our20 minutes ofup so we’re going to cut this offand the sauce as you can see the sauceis a little bit thicker now if you wantto add some cornstarch to thicken it upyou cani don’t want to put it i don’t want itto be a thick sauce i want to be a lightum just a light uh coat over the chickenbut it’s gonna thicken up as you allowit to sit herethick enough but what we’re gonna do iswe’re going to brush thisum about 10 minutes umfrom the end of the cooking time we’regonna brush it over our chickenthen let it sit and then let it cook forfive more minutes turn it back overand then brush the other side let itfinish cooking for five more minutesthen we’ll beuh we’ll be pulling those wings out allright so let’s move onall right so here is the finishedproduct forour taco and tequila wings take a lookat this this isvery hot guys let me see if i can holdthis up for youtake a look look at thatall right so what i’m gonna do is i’mgonna go ahead and get these bad babiesplatedup so we can uh begin eatingbecause it’s way past lunch time for meyou guys what you can do is um like isay we’ve i’ve already brushed thissauce on it so there’s no need to umyou know put them in a uh a bowl andadd more sauce to them but what i amgoing to do is i am going tobrush them lightly with some more saucethat way we get a little that flavorbecause the sauce is cooked into it nowbut of course we want a little bit moreadditional flavoras always we like to keep thingsseasoned to the tea all rightlet’s take a look at thatall right and i’m just going to takesome of ourtequila sauce and i’m going to brush ourwingswith some of that tequila saucethis is what you want all rightlet’s move on and there you have it
