hey everybody I’m Joey and do you likecrispy grilled chicken wings if soyou’re in the right place because we’redoing a little experiment with differentrecipes to see which one creates thecrispiest grilled wings of all so followme and let’s turn up the tasty[Music]making crispy chicken wings is reallyeasy if you want to fry them but why frythem when grilling them add so much moreflavor look we’ve already done a videothat shows you how to grill reallycrispy chicken wings but today we’regonna try a couple of different recipesand then my favorite part test theresults now the first thing yet you’regoing to need is a cheap domestic beeryou won’t actually need it for cookingbut nothing goes better with grillingthen cheap domestic beer so that’s whatwe have right here second we havechicken wings as you can see I’ll startover here actually this is going to beour control group this is just going tobe the way that we made them in our lastgrilled video we’re going to season themwith Jojo bro Jojo grub is a simple rubwe created using common ingredientsfound in most kitchens probably yourstoo so over here we’re only going toseason these with Jojo rub that’s itover here we have a 50-50 mixture ofcornstarch and flour two tablespoonsflour two tablespoons cornstarch andthen we’ll add a tablespoon of Jojo rubwe want to keep the seasoning the sameacross all the recipes so that waydifferent flavors don’t impact the finalresult what we’re really checking to seeis which of these makes the crispiestgrilled links and with these over herewe’re going to season them the same waythat we did in our crispy baked chickenwings video using two parts of Jojo rubto one part of baking powder I’m reallyexcited to see how these differenttechniques are gonna impact that finalChris penis of the chicken now before weget started I just need to add the Jojorub to this flour cornmeal mixture righthereall right now that we have these fullyseasoned let’s go ahead and get them onthat grill follow me all right guys justfires nice and hot let’s go ahead andget these wings on the first thing Iwant to mention is in my last crispygrilled chicken wings video I went lowand slow cook these for about 75 to 90minutestoday we’re going real hot with this andhow we’re going to achieve that is withthis vortex basically we get all thejumbo lump charcoal in here light it andit gets this pit so hot hotter than itwould be if I just poured the coals inthere so that’s important I have boththe bottom vent here and the top ventthere gonna be wide open so really whatwe want to do is get this pit to about500 degrees as it cooks here we have ourcontrol group these are just wings withonly Jojo rub on them and we’re going toget them right over here can you hearthat pit is nice and hot even thoughthis grate is not over direct heat it’sjust how hot this pit gets when you havethe lid on using that vortex all rightthey’re a little bit close together sojust so I don’t get our control groupconfused with our other batch over herethey look very similar in color so let’sgo ahead and move it over here sothere’s a clean line of distinction andI’ll be able to remember when I pullthem off the grill speaking of pullingthem off the grill the first thing I’mgonna do is get this lid back on andthen we’ll be back and we’re gonna flipthese every 10 minutes I think the cookis gonna take about 4045 minutes alljust depending upon how hot the firestays throughout the cook look if youneed to get the temperature on yourWeber up a little bit more into that 500degree rangevery easy trick you can do it thisvortex is just go ahead and crack thisside just a little bit the more oxygenthat gets in there the hotter the firewill be and this vortex is going to pushthe heat up circulate it around theexterior of the grill and this thing isreally going to act like an air fryerwhich are so popular but the one thingthat you gethere that you don’t get with an airfryer is that awesome smoky flavor fromthe grill so again I’m gonna go grab abeer I’ll be back in ten minutesall right guys these have been cookingon here for 45 minutes I flip them every10 minutes except for the last time Ilet him go for 15 let’s see how theylook first of all this vortex gets thepit very hot even sometimes the handlecan get a little hot so I’m gonna use mygrill glove right here take off the topmake sure I don’t burn myself let’s seehow they’re looking now one way that Ican check the crispiness of these wingsis by taking the end of my instant readthermometer and just dragging it acrossthe skin okayhere a little bit of crisp I mean thesome of the things I notice here are theboth our control group and that withbaking power have a very similar look ifI had to say the control group might bea little bit darker our breaded wingsover here with the flour and cornmealyou can still see some that whiteresidual there a little bit lightercolor but I still think these wings aregoing to need about another 10 minutesbased upon that test so I’m gonna flipthem get the lid back on and be rightback okay so we’re about ready to dig inand try the test but before I do I justwant to talk a little bit about thecoloring in the look of each one ofthese these are our control group rightover here and they look absolutelyphenomenal they have a great dark almostlike a mahogany color I can’t wait todig in I actually had these before so Iknow how good they taste because this ishow I typically make them at home butI’ve never tried these other two ways soover here we have our 50-50 mix and thefirst thing I want to bring to yourattention is that they look phenomenalthey have a great color very looks a lotlike fried chicken would look the onlything is I just want to bring yourattention to here we still have a littlebit of white from either that flower orthat cornmeal and now it’s not on allthe wings so you can see this one doesnot have itthis one does as does this just a littlebit here so will be interesting to seehow that impacts the flavor now rightover here we have our baking powdermixed with our Jojo rub and these youknow they’re they feel a lot crispy ornow than they did when they came off thegrill as you can see they have a verysimilar color to our control group maybejust a little bit lighter but enoughabout the look they certainly all smelltremendous let’s dig in and see how theytaste[Applause][Music][Applause]goodnot that crispy you can see the skinpulled away it’s good wing it’s not agreat wing not my best maybe onsomething like this I should let him gofor up to an hour not a bad wing thoughI’d be happy to be serve that any day ofthe week over here this again this isour 50-50 mixture of flour andcornstarch and again look at that colorthat looks incredible see how they tastethat was a crispy or wing you don’t getas much direct seasoning as you do withthe control groupI think the flour and the cornstarchhelp kind of dilute some of that flavorif I did this again maybe I’d add just alittle bit more Jojo rub to it it’sdefinitely crispier than our controlgroup and it does have a little bit ofthat KFC type fried chicken flavor nowlet’s check out our final group this isthe exact same recipe that we use tomake crispy baked chicken wings only wedid it in the oven let’s see how itturns out when you cook them on thegrill boy those sound a lot crispiergreat wing it tastes very similar to thefirst one but this one is actually muchcrispier as we know that baking powdercan change the ph balance of the skinmaking it crisp up as it cooks well I’vetried the drum ease in all these so nowI’m gonna go ahead and I’m gonna trythis flat see how that goes first of alllet’s get one of those pesky bones outof there now mm-hmmwhat was a big bite is good again verycrispy this one going back to thesethese tend to have just a little bitmore texture to them but try this flathere just for a pasta tea see how itturns out that skin right there had agreat crunch Wow guys this is gonna be areal tough to pick a winnerI think this had more direct flavor fromthe Joe Joe rub but it’s clear to methat both of these two were crispy erthan this one I think this one couldhave used a little bit more flavoringbut I would do this one again any dayreally it’s hard to pick these arecoming in very very similar to me sowhether you use baking powder or thatother mixture that we talked about Istill think you’re gonna come out betterthan you would just straight seasoningyeah this is really tough it’s muchcloser than I thought it would becandidly I thought with these ones withthe baking powder on them would turn outthe crispiest but that doesn’t seem tobe the case now we do something a littledifferent with them in the oven where werender the fat we go low first beforeyou go a high heat and these are reallygood as wellI wanted the Clara winner it’s just tooclose yeah so look I have a question foryou guys at home how do you cook yourwings we’d love to hear
