Spicy Tamarind Grilled Chicken & Herbed Butter Rice
INGREDIENTS
-whole chicken leg along with the thigh
-lemon juice
-salt
-black pepper
-dried red chilli
-garlic
-oil
-kasoori methi
-mint (pudina)
-coriander (dhania)
-butter
-msg(optional) recent studies show that msg wont kill you .
-tamarind chutney
-tomato ketchup
-red chilli powder
-steamed rice
PREPARATION
-start with marinating your chicken with some lemon juice, salt, kasoori methi and black pepper . give the chicken a good rub and add in your main marinade ( to make the marinade you need to boil some dried red chilli’s along with few garlic cloves for 1min over medium flame . let it cool down then add in your red chilli’s and garlic cloves in the mixer grinder . add some salt and little bit of oil and grind it to a fine paste ) . massage your chicken well and put it in the freezer for 30 mins .
– finely chop a few mint leaves and coriander leaves . the coriander leaves are a bit more in proportion than the mint leaves .
– for the tamarind barbeque sauce . you need tamarind chutney , add in some tomato ketchup and red chilli powder . your sauce for glazing the chicken is ready .
METHOD
-prepare your Herbed Butter Rice . pre heat a kadai or wok on a low flame. add in half tspoon of oil and 1tspoon of butter (butter has a low melting point for which it gets burned fast . to avoid that its good to add a bit of oil ) . put in your chopped coriander and mint leaves. give it a quick stir for 20secs and add in 1tspoon of salt , 1/5tspoon of black pepper and 1/5tspoon of msg (optional) . give a quick mix and add in your rice . the entire process should be cokked over a low flame . it will take about 3-4mins to cook the rice .
– the easiest way of making the chicken would be putting it in to an oven and glazing it with the sauce while its half way through. you can fry it in a pan as well while glazing it with the sauce.
if you do it over thr fire it might take a bit of work but the result is going to be worth it . making it over the fire gives the chicken a really nice smoky flavour. the chicken should take between 17-20mins to be completely cooked.
