hey they’re all youtubers today I’ll beusing my hybrid smoker slash grill andit’s a pellet slash charcoal PIDcontrolled modified Frankensteined pitof insanity yeah that’s rightPID controlled using a fan slow smokehigh temp heat yeah that’s rightalright let’s get it fired up alright sowhat I do here is I turn on the fanhere that see that turn on a fanI get these charcoal way using the torchI’ll be grilling today so we want somehighover charcoal coverage instead of a lowand slow you knowsnake method from this side on the slowall over all over charcoal herecombination ofand that’s in that fanall right so what I have here is amodified elevating rack I don’t if youcan see that but it will keep the rackfrom dropping down okayso we arethe ID sensor written there let’s goahead and get this lid on started offslow here well not too slow I got to setit3:25all right this would come up the tentreally click really quick so see what’sgoing on here PID control charcoaldirect drilling all over charcoalan appellate rule no calots charcoalall right so I just want to show you Iswear it was four minutes not even noteven yet not even four minutes have thetemp from PID controller set at 325 320those coals are hot and they’re ready torock all right so we’re gonna get thosepotato wedges on get those wedges onbefore I turn that fan back on here wewant to see see the temp Trump’s that isPID control people that is right allright so what we have here is somerusset potato wedges and they’re gonnabe direct grilled and all I have onthere is a little bit of olive oilthat’s it direct grilling on thiselevated rack all right let me get theseon all right so I got those potatowedges all in there guys could hear thefanI turned the fan onit’s gonna come right back up to that325 I think that 325 is gonna be greatfor that elevated direct really on thatrack there yep all right so after thosepotato wedges are on if you’re followingalong at home there you have it326 my temp PID temp set is 325 up thereit is 325 just like that all right soafter about seven minutesI went from 325 I cranked it up to 375and we’re working our way up to thatall right time to flip and as you cansee we got a few hot spots there yeahI’ve got some nice nice crust on thereyepall right well we’ll just continue goingon and I could see a hot spot rightunder there yepso we’ll just move these around and keepgrilling them up all right so after 25minutes here those potato wedges I wouldsayjust like that down below and let’s seehow it’s gonna take for us to get up toI don’t know let’s let’s be a littleconservative let’s say six hundreddegrees six let’s go nuts and say 700degrees no that’s ridiculousnow let’s do it should we now let’s lookdifferent 650gotta love the PID so anybody see what’sgoing on here I think a couple you guysdo 650 and there you have it on yourmark get set go all right so after fiveminutes we’re up to 550 and risingthat’s five minuteshalfway cracked and I took that magmaoff of there so that’s open also allright so I’ve got these pork chops andlet’s look look at that that is intensethat is seriously intense that’s someintense heat right there so rememberthis is an elevated rack elevated rackhere people let’s go ahead and get thoseonhear that sizzlehe’s on look at thatthat is a town seatI think we could go ahead and getif these the pay is offthose are donethose are gone and thesethese pork chops will be done and noteI mean they’re close enough for a nicesear buthigh enough for so they don’t burn yeahso there you goPID control of peopleall right so after five more minutes asyou see I have been PID set at 650 it’sup to 611 look at all of that play itall that smoke and all that heat oh yeahlook at the way those hot coals that’sfive minutes people look at that allover direct sear all over direct seardirect grilling over over charcoal Sitasee that right therethere you have it all right that’s overdirect hot coalsalright here we go folks turn it off weare done oh yeah they are some beautiesdirect them grilling PID control seethat setup favorite setup people rightthere is where it’s at some of you guysgot the pids aren’t there okay so asmrs. H MP plates up the green beans sothere we have it we have potato wedgesand we have some grilled pork chops overdirect charcoal and you know I’m gonnahave some HP sauce on those thosepotatoes because that’s the way you doit what do you mean you want to do withthe barbecue sauce there’s the barbecuesauce
