Grilled BBQ Pork Belly | Inihaw na Liempo

Nothing beats having a really good grilled bbq pork belly right at your home on any day and enjoying the company with loved ones.

There are many ways of grilling pork – pan-grilled, oven, or using gas. The best for me is using charcoal as it gives a smoky flavor which contributes a lot to make it more delicious. I love to eat this with warm rice and a side dish of atchara or ensaladang mangga. Don’t forget to dip it with soy sauce and kalamansi with chilis.

Ingredients:
* 3 pork belly strips
* For the BBQ marinade – 5 Tbsps banana ketchup, 1/4 cup soy sauce, 5 pcs kalamansi (juice extracted), 1 Tbsp brown sugar, 1 tsp garlic powder.

Procedure:
1. Combine all ingredients for the marinade and mix well in a bowl.
2. Pour the marinade in a container. Dip the pork belly slices, turning on each side so it is well coated. Cover and marinate for at least 5 hours. But for best results, I suggest refrigerating overnight.
3. Prepare the griller using charcoal. Place the pork belly slices.
4. Turn and baste each side, repeating the process until pork is cooked.
5. Remove from heat. Cut into bite-size pieces or leave as is.
6. Enjoy with warm rice. Happy eating!
