guys appreciate it thankyou very muchhi guys what we’re gonna make todaywe’re gonna make a Mexican mixture ofNicaraguan chicken tacos mix cracks andknow that it’s gonna be good it’s gonnabe good you know your lemon come onlet’s go[Music][Music]hi guys here’s the ingredients we gotolive oil I’ve got some good uhHimalayan pink salt really healthypepper cilantro limes tomatoes onionsgarlic Serrano chili yeah babyalso we have my black beans low we gotthat writes for Mexican Mexican rice andthen we have this right here I’m gonnashow you guys how to make my littlecabbage salad you’re fine you’reprobably gonna know my secret so I’llteach you guys that you’ll see and ofcourse I love chicken thighs you knowjust because it’s got a nice flavor toitit’s good stuff come on let’s go allright every want to hear what we’regonna do we’re gonna take the chickenout we’re gonna rinse it okay here we goyou always want to rinse her you knowyou’re checking your meat your pork orfishyou just never know you know so justplay it safe all right here we go we’regonna rip the skin out now take thelittle fat out that would it be nice andhealthy I like to poke my chicken thatway uh Wolf’s eyes it’ll catch a reallyreally gift flavor to it what I ever wonon a chicken this is what I like to putI just thought chopped up like twocloves of garlic that honey that I justchopped and then pepper mustardHimalayan salt and my little secret butthis time I’m going to put mango beer ohboy oh all right here we go we’re gonnaput some of the onions in there onionsalways it adds on a really really extraflavor to itgarlic add on a little pepper to it somemustard perfect now we’re gonna add themsome some saltyou know I always do it to your owntaste you know just I already have minealready measured itself that should beexcellent and then of course you hearthis get rico that’s so goodI say you should add on the bottle justa little over a quarter all right thenwe’re going to add a little bit of aone-hole life to ityou know that’ll kill that taste thatflavor that the chicken has and you wantto live is sitting there marinate atleast I would say like half an hour 45minutes you know that way you don’t havea nice flavor to it there we go now youwant to play with it all right so I justleave it sitting there for probably like40 45 minutes and then every 20 minutesyou know just flip it over and each sidethat way did you know it’ll catch a niceflavor to it and each side all righthere we go we’re put enough olive oil inthere we’re gonna make Mexican rice andthe pan has been warming up for aboutsix minutesone cup of rice in there now you want tohave it like like medium medium-highyou know we’re gonna wait till get soI’ll be right brownish you know goldenand once once that happens in now we’regonna bring that tomatoes and garlic andthe water nowall right everyone we’re gonna blend ita whole tomato a magic I just throw thewhole thing in there I love garliccouple garlic cloves we’re gonna addsome salt in it and then you’re gonnaadd some more salt later on to the ricebecause you got to put some regularwater in it so we’re gonna blend this upall right now that the rice is nice andgolden want to add on it[Music]if you want to add on I’ll get anotherone in a half to two and a half alltogether and I have a little salt to itlike I said just having an idea I’m likesalt you know I need you could taste itafterwardsI really never measure anything you knowjust been cooking for so long for mykids that I’m pretty much an exportexpert let me taste it Wowperfect one thing about Mexican rice youknow it’s not like my kind of rice youknow the Nicaraguan type mine it’salmost got to be like covering the ricethis one you could just cover it up whenit has a lot of water and still on topso that way the rice will be nice andmoist you know for about then you let itsit in there cover it up for about 15maybe 20 minutes and it’ll be nice andmoist we’re gonna add on some onionsright on top of raw onion right on topof the rice and I could say you knowanother another buy wait 10 minutes init here we go with the chicken nowshould have a nice flavor to itit’s real been on for about 15 minuteson low so these were low and mediumso now just uh cover it up a little bitof that juice in itwe’re gonna save the other half for theother side now the other side so nowwe’re gonna make the beans like the waywe make it into kelabrayou know there’s olive oil so we’regonna throw some onions to ityou know up there we use a lot of blackbeans or red beans – all right I got Igot the white onion sautéing wonder Ihave two clove of garlic in there justdo you I had an extra flavor to thebeans you know just letting caramel icefor about a minute to their God I’vealready catching a nice color to itonions – nice and fresh so now do youwant to play with it move it aroundeverywhere and cook it around for aboutten minutes to dry up when you got somethings you don’t want it dry so unlessare you cooking on a roll and then justplay with it every every two minutes andcooking alone these are my mom freshbeans the way she makes it you know sheputs in a pressure pot with like threecloves of garlic and salt and let itcooking it for about 4045 minutes and itcomes out just like this beautiful niceand freshwe’re gonna do that little cabbage saladfor the chicken tacos so we’re gonna cutthis baby in half it’s not these awesomeput that baby on the side probablyweren’t you only gonna need have a halfa cabbageI want to use just a quarter behind itthis unnie was big and this you know youwant to just cut it from the top youknow you don’t want to use the bottomthe roots so just keep cutting from thetop and you want it to catch it a littlecilantro flavor in it all right nowwe’re gonna add on some garlic spread onit this is the kind of little cabbagesalad that they use for like fish tacosit’s really good I added that surroundthe to it you know we like everything alittle spicy but this is going to beperfect for that chicken tacos I have toone side cooking for about this I righthere is nice I could cook the waiter forabout 15 minutes now what I do I usuallypinch of it all over again and throw therest of the juice on top of where theside is already cooked the other side Itake that alreadyall kinds of juices just like that nowwe’re in a way the other say now they’re15 minutes since this side it’s alreadycooked you might as well put the onionslet it caramelize on top of it except ofyour chicken and but I’m being about aboom try we’re gonna do we’re gonna warmup that pill yesall right you know it since we’re makinga nice Mexican dish you know that tacono you know let’s go for a nice Mitchellout again but this time it’s gonna be amango flavor to it so that bad boysgonna be so good so we’re gonna add onsome tahini it’s got a little spicyflavor to it and let lime in it and allthat so we’re gonna salt the rim withdress the rim up with that the Tajin Ilike it with the little ice in it sowe’re gonna do when I pour the beer intherenice and slowand we’re gonna add some some length toitokay we’re gonna add on some celery saltto it this makes a big different sellersof salt a little bit found on ice andthin I would say about eight of themthere’s popular throw some Tajin inthere too as well right inside there itadds more flavor to it[Applause]salute cheers everyone all right so nowwe’re gonna slice up the chicken nowwe’re gonna make the plate the taco therise to the beans and all that and herecomes the best part the rice is nice andmoist now this is the way we eat thebeans in their Corral with onions garlicand then I’m gonna make me a coupletacos to it Adam chicken in there niceand tenderand I dried up perfect it’s purple rightthere and then my famous spicy
