Pork Collection #1 – Pork Chops w/Dry Compound (Video 7 mins)

Dry Rub Compound
2 Tablespoons chopped fresh thyme or 2 teaspoons dried
1 Tablespoons chopped fresh sage or 1 teaspoon dried
2 teaspoons salt
1 teaspoon freshly ground pepper
½ teaspoon ground allspice or cloves
2 cloves of garlic
Compound makes about ¼ cup if made with fresh herbs, enough for 4.5lbs of Pork.
In a small bowl or using your mortar, mash all or mix all ingredients together. Rub pork chops with compound on both sides. This can be done one day ahead or right before you cook them.
Take pork chops out of the refrigerator at least an hour before cooking. You always should bring your pork to room temperature before cooking. This ensures that the pork cooks evenly. Cook pork chops on stove top in a cast iron pan or skillet, grilling each side before adding to a preheated oven at 375 degrees for 20 minutes. Cook until the temperature is 145 degrees. Let rest for 5 minutes before cutting into.
