what’s up guys languid here fromgrunting city media it’s time forcooking with land tonight we’re gonnamake pork chops and how do you keep porkchops from getting dried out we’re gonnabrine them and we’re gonna brine them insweet tea sweet tea brinepork chops on the gas grill in case youdon’t have the charcoal we’ll use thegas we’re gonna make them they’re gonnabe delicious they’re gonna be juicy youcan do it I’m gonna do it let’s do ittogether it’s cooking with lang let’s gotoday we are cooking sweet tea brinepork chops let’s start with how we’regonna make these pork chops juicy wellwe’re gonna brine them in a brinesolution to see it here it’s basically asalty solution it does something to thechemistry of the meat preserves it addstenderness and so we’re gonna use sweettea as the base of this brine sweet peais basically sugar and water and youknow teaI had this some salt to it added somerosemary garlic peppercorns that’s itthey’ve been in this there’s fourbone-in pork chops have been sittingthis brined in the fridge since aboutlunchtime it’s gonna have enough impacton this beat it’s gonna make it awesomeso that’s first step get them in theBrian let them sit there now we’re gonnatake them out and season them a littlebit the inside of the pork season nowwe’re gonna season the outside just alittle salt and black pepper that’s itI’ve got the gas grill heating up andreally I’m only gonna heat up one burnerbecause we’re gonna do something calledthe reverse sear method and this hasbecome pretty popular the last four fiveyears and it just makes so much sense sothe the basic plan is you cook it onvery low heat until it’s almost donethen you put it over the fire and at thevery end and cook it because if you cookit right now on top of a hot fire you’regonna burn it on the outside the insideis gonna be raw you wanna see raw porkso you’re doing the Dobson way basicallyyou’re cooking the inside first makingsure that’s all done very in searing itout outer edges of it and it’s gonna beawesome last saying grills been heatingup for a while I’m gonna clean thesegrates I’ve had this girl for two yearsnow so I really don’t even have to oilthe grades they’re they’re seasons fromuse so this partner is on high therecipes are off completely so I’m gonnaput the pork chops just over here it’sgonna sizzle just because[Music]and I’m gonna close the loop and this isgonna become an oven basically cookingaround 300 degrees so I don’t know 20minutes or so I got my thermometer 145is porks done temp I’m gonna try to getit to like 125 and then throw them onthe fire for another minute or two atthe end to finish them off but prettyeasy now’s the part that is the bestpartreally you don’t do anything and youjust sit down it you drink your sweetieit’s in more than 15 minutes it’s been ahalf an hour but I’ve been checking thetemperature and they look kind of sadthey don’t look great but you can takethe temperature on them it should beabout once when you buy this 22 123spagettso they’re about 20 degrees from beingdone and so I’m gonna spend this last 25minutes on top of this one burner andI’m gonna stand here and kind of keepflipping on the keypad let them finishoff over hereI’ll be free to start and they’re justgonna kick over here for the last fiveminutes and say their 1:45 they willpick up some color they’re gonna look alot better than they look right now andthey’re gonna taste awesome about fiveminutes later I think these guys areready to come off this drill so you seethey got some nice color they’re gonnabe perfectly cooked they’re right at1:45 so now I’m just gonna let themchill out for like 5-10 minutes on thiscutting board before we cut into thembut 1:45 they’re gonna be almost pink inthe juicy because of the brine and thething about brining is it lets you slacka little bit so if you cook them alittle overdone whether in the past theymight be dry and kind of chalky the waythe worst pork is but won’t matterbecause you brine them and it gives youa little bit more wiggle room anywaythese are perfect I’m gonna sit down andlet these chill out like 5-10 minutesand then we’re gonna time to eat anddon’t tell me these pork chops are gonnabe driver cuz look at the cutting boardI was juice it’s just kind of come outof them sitting here that’s gonna be oursauce for these pork chops not that theyeven needs us can we cut into one andlet’s see what we’re working with thereit’s white but thinking you zoom inthere you’ll see its moist it’s gonna beawesome[Music]you can see the liquid in therelet’s seeit doesn’t taste like sweet tea there’slike pork chops but it’s salty and has akind of the Irby favor from the garlicthat was in there in the rosemary it’sso goodI’m so easy you can do this sweetie barnporkchops on the gas girl anyone can doit I did it you can do it let’s do ittogether this is cooking with lang
