How to BBQ Pork Steaks on the Pit Barrel Cooker | Barlow BBQ

Today on Barlow BBQ, we’ll show you how to BBQ pork steaks on the Pit Barrel Cooker until they are fork tender. We’ve also got a great recipe for a Spicy Apple Bourbon BBQ sauce that we think you’ll enjoy, and it goes great on smoked pork steaks! All recipes are below!

BARLOW BBQ PORK RUB
1/2 cup black pepper
1/4 cup salt
1/4 cup paprika
1/4 cup brown sugar
1 tsp lemon pepper
1/2 tsp garlic powder
Dash of sage
1/2 tsp onion powder

SPICY APPLE BOURBON BBQ SAUCE
3/4 cup ketchup
1/3 cup apple cider
3 tbsp maple syrup
2 tsp worchestershire sauce
1 tbsp bourbon
1 tsp cider vinegar
1 tsp soy sauce
1 tsp black pepper
Pinch each: cinnamon, clove, ginger powder, allspice, cayenne pepper

Mix all ingredients in a saucepan and bring to a boil over high heat. Reduce heat to low and let simmer uncovered for up to 30 minutes or until sauce thickens.

BBQ PORK STEAKS ON THE PIT BARREL

Light the Pit Barrel according to the instructions included with the product. While you’re waiting for the charcoal to light, season the pork steaks with Barlow BBQ Pork Rub or your favorite seasonings. Place the pork steaks in the fridge until it’s time to cook.

When the charcoal is ready, dump it into the Pit Barrel and add some chunks of your favorite smoking wood. Hang the pork steaks in the Pit Barrel, cover and let smoke for an hour and a half or until the rub has set.
When the rub has set (it no longer feels pasty), remove the steaks, wrap in foil, and place them back in the Pit Barrel. Continue to cook until the pork steaks are probe tender – ie you can easily insert a toothpick into the middle of each steak. Remove the steaks, slather with sauce, and enjoy!

hey it’s good to see you today onBarlowe barbecue thanks for stopping bytoday we’re gonna smoke some pork steakson the pit barrel cooker and we’re gonnado our best to try to get those forktender so alright y’all this should be areally easy cook stick around let’s getstarted alright y’all I’ve got thecharcoal going right here for the pitbarrel and that’s almost ready so whatwe got to do right now is take a look atour pork steaks we got some rub to puton those and then those will be readyfor the smoker so today we’re usingthree pork steaks they got a nice sizeto them and I put together a homemaderub that goes great on pork I love arecipe for right down below in thedescription box so you can give it a try[Music]once you got both sides coated and rublet’s go ahead and put those in thefridge until it’s time to cook and justlike that this charcoal is ready it’sbeen going now for about 20 minutes solet’s go ahead and get that on the pitbarrel and I’m gonna drop a big oldchunk of hickory wood for our smoke nowlet’s go ahead and get these pork steakson and I’m just gonna hang two of themthis third one just seemed a little bittoo kind of skimpy in the middle Ididn’t want to have a fall off the hookso I’m just gonna lay it across thegrill let’s get the other piece of rebarin and we’re good to go all right youall the plan from here on out is realsimple we’re gonna let these smoke for agood hour and a half and then we’regonna take them off wrap them in sometinfoil put them back on the pit barreland let those cook until they hit thetenderness I’m looking for so now thatwe’re smoking I’m gonna go ahead andgrab myself a little bourbon and let’sgo ahead and put together that barbecuesauce we’re gonna use later on so todaywe’re gonna make a spicy apple bourbonbarbecue sauce y’all so you’re gonnastart off you want to put everythinginto a saucepan because we’re gonna putthis on the stove in a little bit andlet this all simmer together but we’regonna start off with some ketchup that’sgonna be your base and I’ll have all themeasurements for this recipe right downbelow in the description box just clickshow more now to the ketchup we’re gonnaadd some apple cider next up we’ve gotsome Wurst just to Shire saucewe’re stitich attirenext up some maple syrup yeah all rightnow we got some cider vinegar next upwe’ve got perhaps one of the mostimportant ingredients here’s a littlebit of bourbon right here Cheershere’s some soy sauce add some blackpepper and in this bowl right here we’vegot a pinch of cinnamon cloves someginger allspice and cayenne for a littlebit of heat with all that sweet let’sgive that a stir now we’re gonna takethis inside bring the sauce to a boilthen reduce the heat and let it simmeruncovered for about 30 minutesall right y’all Cheers glad you couldjoin us today me too it smells great outhere yeah it does it’s a beautiful dayhere in North Carolina but listen upit’s been an hour since those porksteaks have been along the pit barrelcooker so I want to check them out andsee how they’re doinglet’s take a look all right[Music]these pork steaks are looking awfullynice y’all I’m diggin the color on allthree of these it’s looking real goodnow the one thing I want to be sure ofbefore we wrap is that dry rub we put onthere earlier I want to make sure thatthat has had time to set okayright now it’s kind of feeling a littlepasty and if you wrap it too soon that’snot gonna allow that rub to set up intoa nice hard crusty kind of bark allright so these need just a little bitmore time let’s say another 30 minutesor so and then we can check on that barkand see how it’s doing we’ll see yousoon hey cheers y’all listen these porksteaks have been smoking now for an hourand a half what I want to do now is takethese off we’re gonna wrap those in sometinfoil and then put them back on andtell the hit tenderness all right solet’s go ahead check these out see howthey’re looking get them in some foil[Music]now let’s go ahead and wrap these in asingle layer of foil and what wrappingdoes is it’s going to help speed up thatcooking time and it’s going to helptenderize the steaks so this one’s allset let’s go ahead and get these back onthe pit barrel and we’ll let them cookfor another hour and tell they feelprobe tender and I’ll talk a little bitmore about that later on when they’reready all right so I’ll see you all realsoon well folks it’s been an hour and ahalf since we wrap these put them backin the pit barrel and right now I thinkit’s time to check for tenderness nowwhat I’m going to use is this toothpickright here this is my thermometer nowyou may have noticed that I haven’t usedany thermometers in this video at alland I just really don’t need them forthis cook it’s all about the tendernessand how the pork feels okay so let’s goahead and open up the pit barrel unwrapthe pork steaks and check them out[Music]so let’s go ahead and check this middleone first and here we gooh yeah this is feelin it’s feelingactually really good check the edges -toothpick feels like it’s going intosoft butterthat means it’s nice and tender I’mcalling this one done this one is readyto come off the grill now let’s checkthis one back here I’m not smelling goodyookay handy-dandy toothpick test yep thisone’s feeling feeling the same nice andtender I think this is gonna work – allright let’s get this one off as well andlast but not least let’s see how steaknumber three checks out oh yeah this isfeeling good – that toothpick test isthe way to go folks alright these arethese are good to go so I’m gonna goahead let’s get them off the pit barreland it’s time to slather them and someof that spicy apple bourbon barbecuesauce we made earlier as I sound good orwhat[Music]you know yeah here comes some of thatspicy apple bourbon barbecue sauce andthat that’s just a fun name to say y’allshould really try this one out I thinkit’s gonna be real good y’all so we’rejust gonna slather all these pork steakswith that barbecue sauce and then we’llsee in just a minutefor taste test all right folks I’mexcited to try this out this looks sogood okay as you can see fork-tenderlet’s try it out this is gonna be in thebright spot of this cloudy fall day Wow[Music]hey sweetie that’s greatthat’s a keeper that’s probably the bestpork steaks I’ve done yeah I think so Ithink so the most tender I’ve done
