Shredded Chicken with Homemade BBQ Sauce

Pressure cookers are an awesome way to make shredded chicken, and you can do this exact same recipe with pulled pork–just cube the pork in 2″-ish pieces first. As for BBQ sauce, this one is not too sweet and very spicy, with a sharp mustardy bite to it; don’t forget to check the notes below.

For the chicken, you need only:
Bone-in, skin-on chicken (of whatever type and in any amount you like)
Salt
Pepper
A beer

For the BBQ sauce*:
1 cup ketchup
1/4 cup red wine vinegar
1 Tbsp Worcestershire sauce
1 tsp garlic powder
1 tsp onion Powder
1 tsp salt
1 tsp freshly ground black pepper
4 oz (about 1/4 cup) habanero Hot Honey (www.FrogsPointHoney.com)**
2 Tbsp mustard seed***
A few dashes liquid smoke
1 tsp chipotle powder (or other chili powder)
1/2 tsp smoked paprika
1/2 tsp ground ginger

*Barbecue sauce is nothing more than sweetened ketchup with vinegar and spices. How much sweet, tangy, and spicy you want is a really fun thing to experiment with, and inventing specific sauces to go with specific dishes and cooking techniques is part of the fun of cooking, so don’t take this as gospel, it’s just one example out of millions!

**This is a “mix with shredded meat” BBQ sauce. If you’re going to be basting it onto something on the grill, double the Hot Honey, or add 1/2 c. brown sugar–grilling is largely about caramelizing all that sugar, so make sure you have enough! I would keep some of the less-sweet (but still sweet!) stuff for the table, though.

***As I mention in the video, this is a LOT of mustard seed. You might want to start with maybe half that, try it, and if you want more, add more. I like the sharp, mustardy kick of this sauce, but it’s not going to be for everyone; many BBQ sauces have no mustard in them at all.
