Bulgogi: Korean Grilled Beef

On Saturday, June 29, 2019, President Donald Trump visited South Korea. At a state banquet in his honor, the president was served a traditional Korean meal which included bulgogi, a marinated and thinly sliced charcoal grilled steak. The chef who prepared this dish made a marinade using soy sauce that had been aged for 360 years. This means that this particular batch of soy sauce was made in 1659, long before the United States even existed as a country.

Since food at state banquets may be used to make political statements, I cannot help but wonder what South Korea may have been saying to Donald Trump. As a chef and a foodie I find it fascinating that other countries have catered to the president’s known dietary preferences. For example, while visiting Japan instead of enjoying traditional Japanese fare, Trump was served a grilled steak with potatoes, carrots, and broccoli, He even got one of his favorite desserts, vanilla ice cream.

When Donald Trump visited Saudi Arabia, while everyone else ate traditional Arabic fare, the president was served steak which he enjoyed with ketchup. In contrast, the Koreans served him an exquisitely prepared meal that Mr. Trump was unlikely to eat (except for perhaps the steak). In possible anticipation of this, the Koreans also provided sliders.

Inspired by the story of Donald Trump’s Korean meal, I thought it would be fun to produce bulgogi. For that matter it would also be fun to produce a film on the production of White Castle sliders.

If I ever produced bulgogi with my advanced culinary students, I would have to bring a charcoal grill to school. Since I only have 1 grill and 4-5 groups of students, I am not sure if it would be feasible to teach students how to make this. I will have to think about it.
