Baked BBQ Tofu w/ Apricot BBQ Sauce Recipe
1lb. tofu, drained/pressed, cut widthwise into eighths
2 tbsp peanut oil
1 tbsp soy sauce
1 recipe Apricot BBQ Sauce
Apricot BBQ Sauce:
1 tbsp peanut oil
1 small yellow onion, diced
2 cloves garlic, chopped
1 1/2 lbs apricots (6-9, depending on their size), pitted/sliced about 1/2 inch thick
1/2 cup vegetable broth or water
1/4 tsp ground ginger
1/4 tsp ground coriander
several pinches of freshly ground black pepper
1/4 cup molasses
2 tbsp pure maple syrup
2 tbsp tomato paste
3 tbsp soy sauce
1 tsp liquid smoke
Marinated Italian Tofu:
1 lb. extra firm tofu, drained/pressed
1/2 cup white cooking wine
2 tbsp olive oil
2 tbsp balsamic vinegar
2 tbsp Bragg Liquid Aminos or tamari
2 tbsp fresh lemon juice
2 cloves garlic, smashed
a big pinch of dried basil
a big pinch of marjoram
a big pinch of thyme
