BBQing chicken is one of the most common meals in Belize. You will see BBQ chicken for sale on many streets and it is at every backyard BBQ. I have finally mastered the art of the chicken after living in Belize for eleven months watching the locals cook.
While the chicken thaws soak it in limes. This will clean the chicken from another potentials.
After it has thawed and soaked you will want to give it one final wash to remove any debris and get it ready to be seasoned.
Seasoning is most important. Salt is always required and the reason why is that the molecules are so small they soak deep inside and tenderize the proteins allowing them to hold onto more flavor.
I am big into healthy eating, so as long as there is no sugar you can add as much seasonings as you want to the chicken. The longer it can soak the better.
We don’t really use the big metal BBQs you find in developed countries. My friends and I have always used charcoal and set a metal grill on top of some rocks or bricks.
Once the grill has heated up set the chicken on and continue to flip throughout the next hour or two. This is a slow and long cooking process but it is absolutely worth it.
Make sure to use water to wet the chicken occasionally keeping it moist and preventing burning.
When I think it is ready I use a knife to cut open the chicken to analyze the meat to decide if it ready to come out.
I use a little bit of BBQ sauce and mix the chicken up in the bowl.
