How to Make Chicken Lollipops đźŤ
With a sharp knife you wan to cut around the thin, bony end of each chicken drumstick cutting through the skin, meat, and tendons until you reach the bone.
Once you cut all the way down to the bone. Push the meat and skin down toward the thick end of the drumstick to form a “lollipop” end. Take a paper towel and pull the excess off the skinny end over the bone.
You can trim the top joint bone off at the hinge for a more pleasing presentation.
Then take the Lollipops and dip them in a cup of your favorite sauce.
Next, prepare the smoker or grill for cooking at 300° indirect heat for 1hr and 10 mins or unitl an internal temperature of 175°
Once the grill is up to temperature stand up your lollipop and close the lid and let the grill do its work.
You want to open the grill to dunk the lollipops in sauce about every 15-20 mins
The chicken is done when it has a nice gloss appearance and you get a reading of 175° on your instant read thermometer.
