Orange BBQ Chicken
Ingredients:
4 chicken thighs ππππ
1/2 cup BBQ sauce
1/2 orange marmalade π
2 teaspoons lite soy sauce
Instructions:
1. Preheat oven to 375 degrees. Spray 7×10 baking dish with cooking spray.
2. In a medium bowl, whisk together BBQ sauce, marmalade and soy sauce. Place chicken in baking dish and cover with sauce. Tightly wrap foil over the top of the dish.
3. Bake for 20 minutes, then remove foil and change oven to low broil. Let broil until top of chicken is browned.

Zucchini Fritters
Ingredients:
3 large zucchini
1 teaspoon salt π§
3 cloves roasted garlic, minced π§π§π§
1 egg π₯
1/3 cup flour
1/2 cup shredded parmesan cheese π§
pinch of salt and pepper π§
1/2 teaspoon smoked paprika
3-6 shakes of hot sauce, optional
oil for frying (I used peanut oil)
Instructions:
1. Using a box grater or food processor, grate zucchini into a towel or cheese cloth lined bowl. Sprinkle salt across top and let sit for 10 minutes. Bring edges of towel together and squeeze all liquid from the zucchini. Discard liquid.
2. In a large bowl, whisk together garlic and egg. Add zucchini, flour Parmesan cheese, paprika, hot sauce and pinch of salt and pepper. Stir until all ingredients are well incorporated.
3. In a large skillet with medium high heat, add oil. When oil is hot, drop tablespoons of zucchini mixture into skillet, using back of spoon to flatten into round-ish shapes. Cook for 1-2 minutes on each side or until golden brown. Drain on paper towel lined platter.
