Healthy BBQ Pork Rissoles | Kids Lunch Boxes | FitMum Recipes
Prep Time – 5 minutes | Cook Time – 10 Minutes
Ingredients
– 1kg Pork Mince
– 1 Medium Zucchini
– 1 Medium Carrot
– 1-2 Tbsp Minced Garlic
– 2-4 Tbsp Worcestershire Sauce
– 3-4 Tbsp BBQ Sauce
– 1/2 Cup Plain Flour
– Salt & Pepper
Method
1. Grate carrot & zucchini and bind together with pork mince in a bowl
2. Add minced garlic, both sauces and salt and pepper to the mix continuing to mix together.
3. Turn stove on and heat pans whiles you add plain flour and mix until the mixture is easy to work with.
4. When the pans are really hot, take a tbsp of mixture and roll into balls putting them straight on the pan
5. Wait 2 minutes or until the rissole is cooked halfway through then flip, cook until finished.
6. Serve with salad, vegetables, on wraps or sandwiches for the kiddies.
Makes approx 40 Rissoles | Freeze extras for later in the week
