After watching Sandra @ SoulFoodQueen.Net using smoked turkey to season blackeyed peas, we decided to make our own smoked turkey to freeze and store for some of our own future meals.
Ingredients:
3 Turkey Thighs and 4 Turkey Wings
1 cup Orange juice
1 cup Pineapple juice
6 tbsp Olive oil
3 tsp Thyme
3 tsp Rosemary
3 tsp Chicken Spice (We used Bone Sucking Sauce Chicken Spice)
3 tsp Coarse Sea Salt (or Coarse Pink Himalayan Salt)
2 tsp Black Pepper powder and Table Salt
Cooking Directions
Marinate:
1. Mix orange juice, pineapple juice, oil and dry seasonings in a large resealable Ziploc bag (or two).
2. Add turkey pieces and shake to coat well. Try to remove as much air as possible as you seal the bag. Refrigerate overnight (or at least 4 hours). Turning a few times.
3. Remove meat and drain and set aside liquid for basting.
4. Bring liquid to a boil for 3-5 minutes then reduce heat to medium and cook 15 more minutes. Set aside to cool then refrigerate.
Smoke:
5. Place turkey on smoker at 300-350 F for 6-8 hours.
6. Begin adding your wood for flavoring the last 2-3 hours and begin basting with marinade then as well.
7. Check your meat for doneness and remove from heat.

cooking and 1/2 of seasoning forother foods we’re going to do smokedturkey recently I saw a video thatsounded so full/queen did where she usedturkey meat to season her food and Ithought you know we’d love to smokestuff so I thought we would do somesmoked turkey thighs and turkey wingsthat we can use for seasoning our foodso I’m going to show you guys twoingredients we’re gonna marinate thisovernight and then tomorrow when it’s asunny or day because it’s rainy and wettoday we’re gonna slow cook these on thesmoker with some wood to season to me sohang tight I’ll show you our ingredientsall right so our star ingredient isturkey thighs and turkey wings and thatway we get a nice selection justdepending on what we’re cooking and howmuch meat we need we could take oneturkey wing you know shred the meat offof it add it into black eyed peas orcollard greens and whatever it is thatwe’re cooking but to marinate thoseovernight we’re going to use a littlebit of olive oil some natural sea saltsome thyme some rosemarywe’re gonna use some above sucking saucewhich another one of our youtube friendsrecommended to us some pepper some saltsome pineapple juice and some orangejuice so we’re gonna combine all thisinto a marinade put our chickens andgallon bags to let it sit overnight andthen tomorrow morning I’ll get up brightand early andI’ll start slow cook ityoualright mrs. s Jesus Ramadaput our chicken on the slow cooker we’regonna put our turkey on the slow cookerwe’re gonna smoke it for probably six toeight hours tomorrow and then we’ll haveit ready we’ll freeze whatever we don’tneed right away and then we’ll just takeout a piece at a time whenever we’regonna cook something and hopefully bytomorrow we actually have a plan forwhat we’re gonna cook for dinner allright we’ll be back tomorrow all rightit’s the next day hopefully you guys cansee me where’s the Sun so it’s the nextday we marinated our turkey overnightand now we’re out on the slow cooker andwe fired it up warmed it up and we’vejust put our meat on so I’ll let youguys get a quick look at the before andthe after when we after we finish slowcooking it and smoking it so we areright at three about 310 and a warm spotthere and it will hopefully get a littlebit warmer on this in and ignore thatpork roast right there so we’ve got ourturkey here we’re going to pick it atleast six hours preferably eight hoursand then we’ll check it we’ll check ourpork and then we’ll pull it off and giveyou guys an after shot feel like I’m theBlair Witch Project with this new cameraso you can use any kind of wood that youwant to any type of hardwood that youwant to for smoking your meat we’reusing a Hickory but it’s alwaysimportant to soak your wood like we’redoing here we’ve got one batch of woodoutside that we’ve already put on ourgrill slow cooker as you can see outthere smokingand we’ve got another batch on here sothe last couple of hours will constantlyadd a few pieces of wood that keep acontinuous smoke on the meat until it isdonesometimes we do use a pecan sometimes weuse Applewood but today we’re usinghickory yep we are done so we’ve had ourturkey thighs and turkey wings off forwell right about seven hours now six anda half hours and they look perfect we’regonna let them stay off for another halfhour then we’re gonna take them offwe’re going to continue to base themwhich is important if you want to keepthem moist yeahignore that a pork roast over there andwe’re going to take a min we’re going tohave one with our pork for dinnertonight and the rest we’re going to letcool down and we’re gonna freeze themand we’re gonna use them for seasoningfuture meals so we have smoked ourturkey with a hickory wood for sevenhours and it is delicious please ignorethe pork butt over there pork roast andwe’re going to sit down we’re going tohave dinner we are going to do a tastetest of one of the turkey wings yeahmrs. s g shook her head yes she’s overthere cooking food so we’re going to doa taste test of one turkey wing just tomake sure the quality is right but thefor dinner tonight we’re going to have apork roast with potatoes pinto beans anda healthy salad soyep heintroduced me to smoked turkey thighsthat he did and since then we’ve fallenin love with it so we’re going to sitdown and eat I may do a real quicktasting bonus clip after this one so youcan see if we get a thumbs up middle orthumbs down but I think it’ll be thumbsup I actually tasted it when I took itoff the grill those little bits thatstick to the grill those belong to thechef so I’ll bring you guys back for aquick table video and then we will signout all right a couple of weeks ago wegot a care package from our friendElizabeth at Vida honey and in the carepackage among assorted goodies with someWelles barbecue sauce hog heavenbarbecue sauce and we just tried it wedid a full pork and we tried the salsasauce ramai the sauce is very good it’svery similar to the other sauce that shehad sent us before which makes sensebecause it’s all Carolina barbecue sauceshe sent us some Scott’s barbecue sauceand the Scott’s in the wells are verysimilar both very goodthat vinegary South Carolina sauce butthe Wells is just a tiny bit sweeter soif anybody is interested in this ifspecially if here in the South Carolinaarea we’d give it a thumbs up so and thepulled pork we definitely get the thumbsup so just a quick add-on take care allright so we are at the table digging inwe got a Sunday feast here we got ourpulled pork some of the one piece of theturkey we got a wing which is go a lotof me anyone who’s cooked turkey beforeknows you get a mi you get a ton of meatoff every piece we got some roasted babypotatoes some pinto beans and we got ussome lettuce tomato yeah Robby’s gotfish sticks and cheese pizza I’ve tastedeverything again I’m the chef so I knowwhat everything tastes like before itcomes in off the grillso the turkey it was delicious well myopinion of turkeys delicious mrs. s Dwhat do you think yeah we can save thebones when we do our bone broth sk-1what do you think of the turkey allright it is really good so that’s notthe main ingredient for this dish forthis meal but if we’re cooking where amIwe definitely want to taste it we gotour pulled pork that we did and we’reusing a sauce from our friend Vito honeyor Elizabeth as we know her and we tryand we like it again it tastes verysimilar to the Scots barbecue sauce justa little bit sweeter so anything that’swe do you you know our food is good whatnobody wants to talk butall right anything to add sk-1 okay allright SK – what do you want to add a keypiece led to a a cheese stick to changea pizza what about a cheese pizza at afish stick okay that’ll work so we aregoing to dig in enjoy our food and we’lltry to remember when we cook any otherrecipes in the future that we use oursmoked turkey with which you guys see usvery easy it’s just a time element youknow to smoke something long-term youcan do this recipe at the oven as moreof a sit it and forget it but I’mold-school I like to use a slow cookeror the smoker and I just think it hasjust a little bit extra so on behalf ofthe family
