BBQ Chicken Nachos
500gm chicken breast, diced
1 tbsp vegetable oil
1/2 tbsp pepper powder
1tsp ginger garlic paste
1 tbsp Kashmiri chili powder/paprika
1/2 cup BBQ sauce
255gm gm tortilla chips,1 bag
200gm shredded mozzarella cheese
1 red onion, thinly sliced
1 tomato, diced
5 strips turkey bacon, cooked & crumbled
1/4 cup fresh parsley, finely chopped 1/2cup sour cream
1 avocado, diced
Combine chicken with the spices,
Heat oil in a pan, add marinated chicken to it and cook until just done. Add BBQ sauce and combine. Remove from heat, set aside.
In a large baking tray/bowl, spread out two large handfuls of tortilla chips. Layer with half of the barbecue chicken, followed by half of the onion, tomato, bacon, parsley & cheese. Repeat with the remaining ingredients.
Bake on a preheated oven (200C) for 15 -20 minutes. Remove from the oven and top with sliced onion, chopped parsley, sour cream and diced avocado.
