In this video I show you a quick and easy weeknight meal idea using your leftover BBQ beef brisket and a baked potato. A seasoned baked potato filled with plenty of butter, cheese and beef brisket.
Shopping List:
Chopped BBQ brisket
BBQ sauce (optional)
Large Russet baking potatoes
Shredded cheddar cheese
Butter
Salt and pepper
Parsley
Directions:
Bake your potatoes in the oven or microwave. If in the microwave be sure to pierce it all over with a pointed object to allow venting. Chop and re-heat the brisket. Add the BBQ sauce to the brisket and mix well. Cut the potato length wise and push on the ends to open it up. With a fork pierce the cooked potato to break it up. Add salt and pepper, butter, cheese and the BBQ chopped beef brisket, Garnish with parsley.
