Recipe–
Memphis Dry Rub-
2 T. Ground Rosemary
2 T. Ground Thyme
2 C. Brown Sugar
2 T. Garlic Powder
2 T. Onion Powder
4 T. Cayenne
1 T. Smoked Paprika
1/2 c. Salt
2 T. Ground Pepper
Mix all ingredients. Can be made ahead and stored.
Rub evenly on all sides of the Brisket.
Brisket recipe–
4-6 lbs of Beef Brisket
Memphis Dry Rub
3 c. Beef stock
Preheat oven to 400 degrees. Sprinkle rub evenly on brisket. Covering all sides.
Place brisket is appropriate sized vessel.
Place in oven uncovered for 1 hr.
Check after hour, brisket should begin to have a crust on it.
Add beef stock and cover tightly with foil.
Reduce oven to 300 degrees.
Return brisket to oven for 3-4 hrs until fork tender.
BBQ sauce recipe–
2 c. Ketchup
1/3 c. Molasses
1/2 c. Brown Sugar
2 T. Garlic, minced
2 T. Liquid Smoke
2 T. Chili flake
Combine ingredients in small pot and simmer.
When brisket is tender, remove from oven and allow to cool slightly on wire rack.
Slice across the grain. Slather with BBQ sauce before serving.
