Grilled Stuffed Beef Barbacoa Burrito | Mexican Salsa | Barbacoa De Res

Hello my beautiful fam! Welcome back to my kitchen today I’m going to share with you how to make the best beef barbacoa burrito, in Mexico, barbacoa is traditionally made out of goat or sheep slow-cooked over an open fire, traditionally in a hole dug in the ground covered with agave, maguey, leaves! So please don’t come after me for not making it the “traditional way” let me tell you that this is by far the best barbacoa I have ever tasted so I hope you enjoy it as much as me and my family! Ingredients: makes about 10-12 large burritos
4lbs beef chuck pot roast
6 chile chipotle
1 cup chicken broth
1/4 cup Apple cider vinegar
3 limes
1 onion
5 garlic cloves
4 bay leaves
1 tbsp cumin
2 tsp oregano
1 tsp salt
1 tsp pepper
1/2 tsp ground cloves
For the salsa:
4 tomatillos
3 Roma tomatoes
4 chile serranos
1 handful of Chile de árbol
3 garlic cloves
1/4 onion
1 tsp oregano
1/4 tsp sugar
1/3 cup vegetable oil

hi guys and welcome back to my channeltoday I’m gonna share with you guys howto make some delicious food with OCbarbacoa so in case you guys don’t knowhow I make this super easy and deliciousrecipe just stay tuned and I’ll show youhow already I so let’s get started withour ingredients so for this recipe we’regoing to need 4 pounds of beef chuck potroast 1 white onion 3 lines 5 garliccloves four bay leaves 2 beef bullion1 cup of chicken broth 1 teaspoon ofsalt 1/2 a teaspoon of ground cloves 1teaspoon of black pepper 1 tablespoon ofground cumin 2 teaspoons of oregano 1/4of a cup of apple cider vinegar in 6chili Chipotle’s for a salsa we’re goingto need 4 tomatillos 3 roma tomatoes 4chili Serrano’s one handful of chile deárbol a small bunch of cilantro 1/4 of awhite onion 3 garlic cloves 1/3 of a cupof vegetable oil 1/4 of a teaspoon ofsugar and salt we’re also going to needrice I already have a recipe for thatI’ll leave the link in the descriptionbox your choice of beans your choice ofcheese avocados in large flour tortillasso these are ingredients now let’s getstarted my guy so further going to startpreheating your oven to 325 degrees allright guys I’m now going to make ouradobo sauce so my blender are going tosqueeze out the line to get all the limejuicewe’re going to add our 5 garlic clovesare to be fully on our black pepper orsalt ground cuminOh nigga no ground close apple cidervinegar can actually chipotles in adobosauce so now we’re just going to blendeverything together until we have a verysmooth top all right so once we have oursauce we are ready to pour it on ourmeat so now I’m going to grab myroasting pan and I’m going to place mymeat I cut my meat in half so I’m justgoing to place it like that[Music]and I’m going to add my adobo sauce okayI’m going to add the one cup of chickenbroth on my blender cup just I can getall the stopsokay now we’re just going to pour it ontop of our meatso now just make sure that your meat isevenly coatedbut I’m just going to place my onionthat I cut into four pieces just on topof the meat along with bay leaves so nowI’m just going to cover with foil allright so now we’re going to put in theoven remember at 325 degrees for two tothree hours or into a meat is fullycooked alright guys so after three hoursyour meat should be nice and tenderas you can see full support very easy sonow I’m just going to remove my onionsand my babies and I’m going to remove itfrom the bra so I can start shredding itokay so I’m going to remove my meat soyou can cool down a little bit so Ithought it’d be easy for us to shred itand you know the traditional way aboutRocco of course is using um sheep orgoat meat I don’t like either one so forme this is the best for my core but ofcourse you can substitute the beef oruse your preference of me alright sowhile we wait for me to cool down we’regoing to start to work on ourselves downso I already rinse and pat dry myvegetables my tomatoes my tomatillos mychili Serrano’s and that she let theeyeball so make sure that they arecompletely dry before we fry them so I’mgoing to put in a medium range I’m goingto add my 1/3 cup of vegetable oilso once I always have we’re going tostart to add our vegetables but once allthe woods how we’re going to add ourtomato and tomatillos in our tool isaround I’m going to close it and letthem cook for a couple minutes and thenwe’re going fried[Music]we’re going to add our bunch of cilantroin our salt and sugar so for the salt isgonna be up to your preference you canalways add it after we mix it I add a 1mteaspoon okay so now we’re just going tomix it until we have a very smooth salsaall right so now we can transfer it it’sa transfer into your bowl in this salsait’s spicy can you just try it for saltand then if you need some salt just additalright guys so once we’re done with oursalsa we can go back and start shreddingour meat alright guys enough for the funpartmaking our burritos so I wore my mytortillaI just put them in the microwave so I’mgoing to start by adding my cheese I’mgoing to add my meatI’m going to add my rice going to add mybeans[Music]we’re going to add more cheese you knowyou can add lettuce sour cream tomatoesanything I’m going to add a little bitof lettuce my avocado is going to putthem on the side I’m going to add sourcreamand then the best part our salsanow we’re going to roll it so grab theedges of your tortilla just like thatand then roll it like this grabeverything and squeeze it back in thereand then just roll it okayjust like that so now we’re going totoast them in the cumin just like thatreaders can stay like this so we’regoing to toast a tortilla it’s not goingto say my large frying pan I’m going toset it on medium-high heat and once thatheats up we’re going to add our burritoand I casein is just going to seal theedges of our burrito and it’s going tohelp melting the cheese all right soonce that’s hot please your burrito andlet them toast alright so after a coupleminutes we’re going to flip them overand Grill the other side all right soafter a couple minutes check the otherside and they should be ready so now weare ready to enjoy burning gas so now weare ready to enjoy a burrito so I’m justgoing to cut it in halfokay break it in half just like that nowwe are ready are you guys enough for thebest part the taste test I’m just goingto add some more salsa
