Have you ever wondered how to cook Beef Heart?
In this video, Johan Magnusson of Big Swede BBQ is joined by Nils Thuresson of Inamat and together they cook up a delicious Beef Heart Stew on the Daniel Boone from Green Mountain Grills
Ingredients:
1 Beef Heart
3 Tbs Olive Oil
10 slices of Bacon
1 Red Onion
1 Green Bell Pepper
3 Garlic Cloves (chopped)
1 lbs of White Mushrooms (sliced)
1/2 Cup Concentrated Beef Broth
3/4 Bottle of Red Wine
Water
1 cup Heavy Cream
4 Tbs Butter
1/2 cup Red Currant Jelly
2 Tbs Flour
Trim Beef Heart and remove all the fat and connective tissue, cube into 1-2 inch cubes.
Set grill to 475 and insert the cast iron pan. Add olive oil and sear the beef heart cubes. When browned all over, remove from pan.
Add bacon and cook until brown. When brown, add onions, bell peppers and garlic. Cook for three minutes. Add mushrooms and cook until brown.
Add concentrated beef broth and wine and reduce the wine to half.
Add the beef hearts back into the stew and lower the temperature to 325. Simmer for 1 hour. If needed, add more water.
After an hour, add cream and infuse for three minutes. Then add butter and red currant jelly and cook for a couple of minutes. Finally stir the flour in some water and thicken the stew. Remove immediately from grill.
Serve with rice and sprinkle some chives on top of the dish.
