tonight we are cooking tenderloin steaksI have taken two pieces of steak andtaken kosher salt and ground pepperI left the steaks out of the fridge for25 minutes so they could get to roomtemperature and I took kosher salt andground pepper and rubbed it in on bothsideswe have now taken a pan and coated itwith olive oil and taken the two steakswhere we’re going to sear them on bothsides this is the first side in the panI’ve added butter and thyme I’m going totake a spoon and start pouring thebutter over the steak now I have thesteaks in a pan with some butter andthyme and I’m taking the butter andspooning it over the steaks because itwill add a nice crust while I’m searingthe steaks in the pan now we’re going toremove the steaks on the pan and put iton a cookie sheet so I can finish themoff in the oven[Applause]I’m going to take a meat thermometer adigital one and stick it in the biggestpart of the steak so I can get a readingif you want to steak cooked tomedium-rare you want a reading of 125degrees so I’m going to put this in atemperature of 225 degrees so that itcan cook very slow and we’ll have nicetender steaks but it’s about to go inthe oventhe steaks have been in the oven aboutseven minutes I’m checking thethermometer it says 127 degrees and I’mgoing to take the steaks out of the ovenso cooking the steaks to 127 degrees inthe oven take our steaks to a very nicemedium-rare Center as you can see sothere you have itwe made our steaks without a grill inthe oven thanks for watching tonight
