This is was an amazing cook! I often will judge my cooks by the leftovers… let me tell you the co-workers in the office were really hating on me for not bringing enough to share.
I cooked the chuck roast at 225 degrees with indirect heat on the big green egg using some post oak logs until it was ready to pull apart. Once pulled I added the beef back into the tin to cook and render down some more in the BBQ.
Barbacoa Sauce:

everybody we were making some deliciousbarbecue or today the first step is tomake the actual sauce or paste that’sgonna cook with the meat so we have achicken stock garlic cloves of garlic wehave the chipotle peppers yes they aredried jalapenos then I mix this up and asmall little food processor some oreganoblack pepper kosher salt cloves cuminand now some more chicken stock I wouldhave had beast wood what are these beefstock we had on hand but we didn’t tellhis chicken stock instead mix this upcut your chuck roast into manageablesizes now the fun part you get to brownall six sides of your truck roastsquares if you will where some of theseweren’t squares they’re a little morelopsided so they’re anymore to six sidesbut you know what I meanget them all browned not cook throughjust browning these guys a coupleseconds about 30 seconds each each sidedon’t go overboard with this this isjust getting a good crust on the on theoutsidenow slowly drizzle that beautiful sauceover the meatlook goodness eat already you’re puttingthis in the big green egg at 225 degreesuntil its probe tender or until it’sdone ask me about eight to nine hours Ididwrap the this tinfoil about two-thirdsaway through the cook to get it to cooka little faster and to have that steameffect and also rotated which the chuckroast and in the pan as well before Itook it out now have fun pulling some ofthis beef in quark about good that tooklonger they should’ve but finally doneget yourself a lime you sure it’s goodand ready and crack this one too let’sgo and do that now Oh perfect right nowback in here now we’re making somehomemade tortillas courtesy of JoannaGaines cookbook that was a 1 and a halfcups flour kosher salt mixing this allup add your water now we’re gonna needthis until it is a like a play-doh lightconsistency get your kids to the thesous-chef was busy during this partotherwise should’ve been doing this cutinto 8 equal squares or sections mightwant exactly equal but again it doesn’treally matter this is all homemadetortillas get yourselves into roundballs and cover them up once we’re readyto cook and make the tortillas flattenthem out with a rolling pin you’re goingfor about 6 inches wide into the bestcircle you can do don’t worry everyonegets an A on this from there right ontoa flattop griddle at la medium to lowheat about 1 minute both sidesonce you’re down to make sure you keepthem under a towel to keep them nice andmoistnow we’re ready to enjoyhere we go can’t wait a lot longer thanthought was going to here we gonice homemade barbacoa beef barbacoahomemade tortillas thanks Johanna greatrecipe let’s begin us a shotit’s me messy workapps incredible such a good flavorthat’s all that gets come together wellof course the other toppings on there wehave Akkad Oh salsa sour creams a limejuice and in the end really really bribebrought the flavor to Rowan go in for asecond we’ll see we’ll see how this goesgreat cook any questions please let meknow have a great day everybodykeep Barbie Queen America until nexttime Cheers
