Today we have a real treat, smoked coffee rub beef ribs on the Traeger!!!
Step. 1. Flavor: To start I will be coating the ribs with Worcestershire Sauce, this will help the rub stick. For today’s rub we are going to be using the Whiskey Bent “The Grind” rub. This rub mixes a bit of ground coffee with delicious herbs and spices, it’s REALLY good on beef!
Step 2. The Pit: Now, fire up your grill, dial it in at 225 and let it come up to temp. I’m using the Traeger but you can use any pit, just want to hold temp around 225.
Step 3. Cookin: When your pit is at 225 you’re ready to drop the ribs on. They’ll cook uncovered for around 3 hours. Spray with water (or beef broth) every hour.
Step 4. Wrap: When the 3 hours is up you’ll want to get the ribs wrapped. Today i’m using one of the Sam’s Club aluminum pans. I’m adding about a cup of beef broth and 2 TBSP of Worcestershire. I also like to add a bit more rub for anything I may have messed up while handling. Once the ribs are wrapped they’ll cook an additional 2ish hours.
Step 5. Almost there: Once you hit 2 hours wrapped you can start checking for tenderness. The internal temp will be around the 200’s. If they probe tender go ahead and remove them from the pit. If not, let them go about longer. No rush! Once they are removed from the put you’ll want to let them rest no less than one hour, this will allow all those incredible juices to soak back into the meat.
Step 6. Wooo Doggy: Once the hour has passed you’re ready to start slicing into those bad boys. A cool party trick is to pull the bone right out without any resistance. Dice em up or eat them as is, the world’s your oyster.
