BBQ Chicken

5 Chicken Legs
Rub
3tsp salt
2tsp garlic powder
2tsp paprika
1tsp black pepper
Trim the chicken legs and season with the rub, grill skin side down on a high heat for 8-10 minutes. Flip the chicken over turn the grill down to a medium heat and let it cook until it reaches an internal temp of at least 165 degrees if it goes to 170-175 its going to be fine. Coat both sides of the chicken with the BBQ sauce and let the sauce set for a few minutes. Pull the chicken off the grill and let it rest for a few minutes. My total cook time was 40 minutes and that included coating the chicken with BBQ sauce. Time may vary depending on your grill and the chicken.

BBQ sauce
1 cup ketchup
½ cup apple cider vinegar
1 tsp Worcestershire sauce
½ cup brown sugar
½ tsp ground cumin
½ tsp onion powder
½ tsp garlic powder
¼ tsp salt
¼ tsp black pepper
¼ tsp mustard powder
¼ tsp cayenne pepper (optional)
cook on the stove for a few minutes and this BBQ sauce is ready to go.

Broccoli salad
1 ½ cups mayonnaise
4 tbsp sugar
2 tbsp white vinegar
6 cups of broccoli
12oz bacon cooked and chopped up
1 medium purple onion diced
2 cups sharp cheddar cheese
Combine the mayonnaise, sugar and white vinegar to make the dressing. Combine all the other ingredients and mix in the dressing. Cover and put in the fridge to let the flavors come together.

Grilled corn
5 ears of corn
Garlic butter (1 stick of butter melted with 4 gloves of pressed garlic and 1 tsp dried parsley)
Place the shucked corn on the grill. I had my grill set to a medium high heat. Rotate every few minutes. When the corn is cooked coat with garlic butter and season with salt

This is an inexpensive meal that could be easily doubled or tripled to feed a crowed.
