hi I’m Carmen on today’s quick tip videoI’m going to show you how to make asuper simple snack or lunch idea sothese are barbecue chicken pinwheelsjust five ingredients so we have a canof chicken I have it drained in thisbowl here 1/4 cup of shredded cheese 1/2a cup of barbecue sauce and then 1 cupof corn so you need fresh frozen orcannedso I’ve canned corn here and I’vedrained and rinsed it to remove some ofthat extra salt from the corn itself andthat our fifth ingredient is thetortilla so we have some whole-wheat 8inch tortillas here so we go ahead andget started to get our chicken in hereand all you do is simply dump in all ofyour ingredients so in goes a cup ofcorn and a half a cup of barbecue sauceand then the fourth a cup of cheese andthe cheese is optional so you don’t havecheese that’s a nice flavor to it andthen you go ahead and mix it up so weare going to be mashing up the largerchunks of chicken so the canned chickenkind of comes out like in big chunks sojust use the back of your spoon kind ofmash it up and this snack and lunch ideais great for kids to even prepare all oftheir own because there’s no heat neededit’s just these five simple ingredientsand if anything you have to help themopen in the cans if they’re not poppedup so again we’re just stirring andmashing this up and what’s the bigchunks of chicken are all broken up andeverything’s nicely combined togetherI’m gonna spread them between fourtortillas so this is kind of fills fillsup for different tortillas so let’s puton our scoops onto here and then youjust take your spin and you spread itaround kind of getting like a an evenlayer get a little more in here kind ofsmash it down and spread it out and thensince we’re making pinwheels we’re goingto roll these up so you just take yourhands and you tightly roll it up until alittle strip here and then once it’s allrolled up and you take your knife and ifthe kids are doing themselves you justgive them a plastic knife because thatworks too and you cut them- like one inch little pinwheels andthen you have your little pinwheel hereyou don’t have to cut it you can eat itkind of that hole of the burrito likethis you can also make it into aquesadilla so take your tortilla up putin your filling fold it in half and thencook it on the stove see you would needto help kids to do that but thesepinwheels you can eat them cold dip themin some extra barbecue sauce or evensome ranch it’s really good this ranchand barbecue I really enjoy but youdon’t need any fancy equipment a supersimple and fast lunch or even snack itemit’s full of protein and whole grainslooking even have some veggies in thereso I hope you enjoy this family-friendlyrecipeyou
