Prepare Ribs and Chicken:
Barbarians Steak Spice. Then brush on olive oil.
Coals:
Natural hardwood.
Cooking:
With pork, always cook one side first. Shuffle around. Once seared, Flip and shuffle.
Chicken is more delicate and a shorter cooking time. Did not match ribs cooking and over cooked chicken, Did cook one side then other. Should of removed to keep juices in. But was way more happy with ribs.
Ribs tender, juicy inside, crispy on the outside. Chicken cooked a little to long but ribs made it worth it.
