Recipe
3 pounds boneless skinless chicken thighs
¼ cup lime juice
¼ cup honey
3 tablespoons maple syrup
¼ cup tequila
1 teaspoon garlic powder
¼ teaspoon black pepper
1 tablespoon chili sauce
1 teaspoon salt
¼ cup cilantro
1 tablespoon paprika
Glaze
2 tablespoons honey
1 ½ tablespoons tequila
1 tablespoon chili sauce
1 tablespoon butter
1 tablespoon maple syrup
*Mix together lime juice, honey, maple syrup, tequila, garlic powder, chili sauce, paprika and salt and pepper.
*Place chicken in a resealable plastic bag and add marinade mixture. Marinade for at least 4 hours or overnight.
*In a saucepan mix together all the ingredients for the glaze and heat up to a boil, let the sauce slightly reduces. Set some of the glaze aside to serve with chicken.
*Place the marinaded chicken on the grill for about 6-7 minutes on the first side and flip over. Brush the chicken with the glaze. After another 5 minutes, flip the chicken and glaze again. Continue cooking and glazing until internal temperature reaches 165 F.
*Take off the grill and pour the extra glaze over the chicken or on the side.
