Fried/grilled chicken biriyani #biriyani

Chicken Marination

1. Chicken – 1 kg
2. Red chilli powder – 2 tsp
3. Turmeric powder – 1/4 tsp
4. Garam masala powder – 3/4 tsp
5. Ginger garlic paste – 1 tbsp
6. Yogurt – 1/4 cup
7. Lemon juice – 2 tbsp
8. Fresh cream (optional) – 1 tbsp
9. Oil – 2 tbsp
10. Salt to taste

Marinate the chicken with all the above ingredients for 3-4 hours in the refrigerator.
Then fry it. You can grill chicken pieces in the oven as well turning the sides in between drizzling the oil.

For masala

1. Onion – 5
2. Cardamom – 3
3. Cinnamon – small piece
4. Cloves – 3
5. Tomato – 3
6. Green chilli – 8
7. Crushed ginger garlic 2 tbsp
8. Red chilli powder – 1 1/2 tsp
9. Turmeric powder – 1/2 tsp
10. Garam masala powder – 1 tsp
11. Cumin powder – 1/2 tsp
12. Yogurt – 1/2 cup
13. Lemon juice – 1 tbsp
14. Coriander leaves
15. Mint leaves
16. Oil – 6 tbsp
17. Salt to taste

Heat oil in a pan, add thinly sliced onion and fry till it turns to golden colour.
Add cardamom, cinnamon, cloves and saute for a while.
Add the chopped tomatoes and cook till soft.
To this add green chillies, crushed ginger garlic and saute till the raw smell disappears.
Then add red chilli powder, turmeric powder, garam masala powder, cumin powder, salt and saute.
Add yogurt and mix well. Add lemon juice, coriander leaves and mint leaves to this.

Add the fried or grilled chicken pieces into this and cook for 5 min in low flame.
(Remaining marinade while cooking the chicken or the dripping while grilling the chicken can be added to this masala.)

Rice

1. Jeerakasala rice – 1 1/2 cup
2. Water – 3 cup
3. Cardamom – 4
4. Cloves – 3
5. Star Anise (Thakkolam) – 1
6. Cinnamon – small piece
7. Saffron strands (optional) (soak a pinch in 1 tbsp hot milk)
8. Ghee – 2 tbsp
9. Oil – 2 tbsp
10. Salt to taste

Wash and soak the rice for half an hour.
Boil water.
Heat ghee and oil in a pan, add cardamom, cinnamon, clove and star anise. To this add the drained rice and saute for 5 min.
Then add salt and boiling water and cook covered on low flame.
Remove it from flame and add saffron milk to the rice and mix well.

In a deep pan, make a layer of cooked rice, sprinkle little garam masala powder and little fried onion. Then put little prepared chicken with masala over it and make a layer.
Layer it till finished with rice as the top layer.
Sprinkle little garam masala powder on top and garnish with fried onion and coriander leaves or mint leaves. Heat it on low flame, covered for 15 min.
And serve hot. ❤️
