hello guys I just have to make chickenwings today and show you how I do it myway so just have some basic chickenwings here and what I’m just doing istaking some off the pan so I can seasonit nicely and evenly all right good allright so what I’m gonna go ahead and doit is I’m gonna go ahead and season thechicken I’m gonna season it with basicsalt and pepper I’m gonna start withsalt so you do season it to your tastethe way you like itI’m showing it you the way I do it theway I like it I’m going to make sure wehave enough salt to cover the chickenput some pepper black pepper okaynext I’m gonna put some garlic powderall right and I do like to just shake itover to the way I like itto put as much as you like or as littleas you like some people don’t like ityou don’t have to put it on if you don’twant to you like it just put as much asyou wish this is onion powder I’m gonnaput a little bit of some onion powder inhere as well okay next I’m gonna addturmeric turmeric is really good for youit’s anti-inflammatory also it gives areally good color to the chicken whenyou with barbecue it nice flavor[Music]good all right one of the favoritethings I like to add to a chicken that’sa lot of other things is called Aleppopepper you can find this in a lot ofMediterranean markets in Armenianmarkets as well actually I’m gonna dothis one like take some in my head yeahwe go sprinkle it on go a little extrabecause it has a really really niceflavor there’s a little bit of spice tothe chicken as well okay[Music]all right so another one of my favoritethings to add this is cold Aleppo butthis is a pepper paste so it’s gonna adda little sauce in us to it I’m justgonna put a little bit in here and as Imix it it’ll be all nicely covered on itso roughly about that much is good youdon’t need to put too much just need tocover the chicken one of the things thatI also like to add on to this is coldmayonnaise mayonnaise is basically likeany oil what it does is it makes it moresofter as you when you cook it it alsogives it a nice crispness to the skinokay all right so I’m gonna go ahead andmix this real quick all right I’m gonnago back and maybe add some things to itif I feel like the this is not enoughbut take a look at these real quickafter I mix it all right I’m gonna addthis to it because I have more room nowall right[Applause][Music]get all the flavors back into the heathere rub it and massage it so that eattakes all the flavor right into it itlooks really good I might wanna add alittle more mayonnaise to it just alittle bit more all right so I had towash my hands so I can get back toadding a little bit more Mayo to it soonce I do this I’m gonna let themarinate sit for about half hour 45minutes so that it all absorbs all theflavors into the chicken and to thechicken wings so the flavor is gonna beincredible I promise you oh it’s lookingso good all right it looks good allright and then after I’d let this sitfor about half an hour 45 minutes when Itake it out to the barbecue and I’llshow you how I barbecue this all rightguys I’m gonna go ahead and finish upskewing my chicken so I can get it allstarted so I’m gonna go ahead and showyou how to I how I skewer this[Music]perfect looks like it’s already over thefinish up the rest of these and I’llmeet you outside okay guys I do have atraditional gas grill that I use forbarbecuing but today I’m going to do theArmenian BBQ with charcoal and I usecharcoal alums and I have to sort it’s amesquite it gives a really nice flavorto me so put some down and put somelighter fluid on it all right get itnice and ready for the fire all rightyou line it up this does take I mean itdoes light up pretty quick so be carefulyou don’t burn yourself all rightjust light it upand you just wait for the fire to allburn through the wood and give you anice even heat all around I’m just goingto wait for this to fire to die downeven off the heat so we got a nice evenheat and and then we’ll get the meatbring out the meat and then start stopthe barbecue so while I’m waiting forthe fire to come down for the meat justwhen it’s happening up I decided to dosome vegetables so have with the chickenyou can do anything you want I mean Iright now decide to do corn some somepeppers and you can do eggplants tomatogreen peppers red peppers whatever youlike the most you’ll give a nice charrush to the vegetables it goes reallywell with the meat so the chicken thereason why you want to do yourvegetables first examine your meatbecause the fire is really really hotyou can take care of the vegetablespretty quickly but you don’t want thefire to put in your meat on the outsideand be raw on the inside then one cookand even even heat so that’s why you dothe meat lest after the vegetables areready to go alrightI think the corns ready to go and I’lltake those up too all right[Music]now that I got my fire nice and even gotthe vegetables out I’m gonna get readyto put my chicken on fire there we gothis is how I do my barbecue chickenwings okay we’ll leave this on the firefor few minutes on each side once it’sready we’ll flip it and get the otherside cooking ready to go and we shouldbe good to go and I wish you guys couldsmell this it is so good you guys youwant to check your chicken make sure itis cooking evenly on all the sidesall right looking good looks like we’regonna start taking this off the bar
