This is simplest recipe of Grilled chicken in desi style and whole murg malai.
i called it “desi style” because in this recipe I’m using only those ingredients which is you can easily find in your home or nearby.
below i have given the recipe of both the dish Grilled chicken and murg malai.👇
WHOLE MALAI MURG:-
Ingredients:-
1.3-1.5kg Chicken (without skin)
3 tbsp Chopped Coriander Stem
3 tbsp Ginger Garlic Paste
2 tbsp Lime Juice
Salt (as required)
100ml Fresh Cream
100gm Processed Cheese
2 tbsp Garam Masala Powder
1/2 tbsp Green Cardamom
Butter ( for basting)
FIRST SET OF MARINATION:-
In first marination 3 ingredients are very important ginger and garlic paste (gg paste), lemon juice and salt. Mix these ingredients.
Make 3 cut on the chicken breast each side left and right and single cut on each thigh.
Apply gg paste, salt and lemon juice on chicken flesh and inside it; rub nicely.
Keep aside and marinate overnight.
SECOND SET OF MARINATION:-
Make mixture of cheese, fresh cream, garam masala, salt (as required), green cardamom powder and chopped coriander stem.
Marinate it for 90-120mins.
FINAL STAGE:-
After final marination put chicken on griller; use barbecue smoker if you have, if not griller or tandoor would work fine for it.
When chicken is half done, baste the chicken (apply butter to enhance the flavour).
When it is done serve it with mint chutney and roti (rumali, tandoori, naan).

BBQ CHICKEN IN DESI STYLE:-
1.2-1.5kg Chicken with or without skin (preferably with skin)
2tbsp Ginger Garlic Paste
Salt (as required)
2tbsp Garam Masala
70-80gm Hung Curd
40-50ml Mustard Oil
1tbsp Kasuri Methi
3tbsp Kashmiri Red Chilli Powder

Make a paste of mustard oil and red chilli powder it gives good colour to chicken.
Add hung curd, salt as required, garam masala and kasuri methi to the mixture.
Mix it well.
Now apply it on the chicken flesh and inside it properly.
Marinate it for 90-120mins.
FINAL STAGE:-
After final marination put chicken on the griller, use barbecue smoker if possible for better taste.
When chicken is half done, baste the chicken (you can apply butter or ghee it will enhance the flavour).
When it’s done serve it with mint chutney and roti.
