welcome to big Knicks meets and treatstoday we are gonna cover chicken wingswith crispy skin but before I even getthe chicken ready to go into the smokerthe first thing I do is I prepare howI’m gonna put them in a smoker theabsolute messiest thing that you can putin your smoker is chicken it just makesa huge mess so when I do chicken wings Icover a cookie sheet in foil and then Itake my cooling racks that I used forcookies and bases and I overlap them alittle bit in the cookie sheet I spraythose with Pam and I put them on thecookie sheet and now I’m gonna get thewings open and get them on the racks andthat will go from thereall right I have the chicken on the racknow and one of the most difficult thingsto do with chicken is to keep the meatmoist and the skin crisp there’sabsolutely nothing worse than eatingchicken wings that have soggy skin andthe meat is moist or the skins crispyand the chickens like eating a bucketfull of sand out of the Sahara Desert soI’m going to show you how to keep theskin crispy and the meat moist thechicken wings I use I get fresh chickenusually from Costco the party wings thefrozen stuff sucks don’t use it and soget the fresh stuff and get the partywings because all that is is thedrumettes and the middle pieces youdon’t have the tips the secret to crispyskin is you need to make sure that theskin is nice and dry when you start so Itake a paper towel make sure there’sskin side up and make sure you get thatskin as dry as you can get it with apaper towel let me keep them skin sideup and dry those off real nice the lessmoisture you have on here the crispierthat skin is gonna be okay that lookspretty good and I’m gonna give you thekeys to the kingdom today the keys tothe kingdomto crispy skin chicken wings is Pamcooking spray yep that’s ithere’s what you do you take yourselfsome Pam and you’re gonna spray yourchickenget that skin nice and covered make sureit’s all nice and covered that is gonnaallow that skin to crisp up real nicelyand keep the meat moist and it alsogives something for the seasoning tostick to so just like with the ribs Idid the other day I’m going to use bigNYX magic meat rub I’ll give you therecipe to that at a later video so I seesome those real nicely and then I’mgoing to put them on the smoker Iusually do the 385 to 395 I like 385with mine and they take about 50 minutesI use Hickory just like I do with porkchicken and pork I want to use Hickoryand I’ll keep them on there for about 50minutes or soall right our chickens done now it’sbeen about 50 minutes looks nice andcrispy and the way I like to eat theseis I like to dip them in in ranch solet’s take a bite and see how it looksmmm look how juicy that is nice goodflavor skins crispy like a potato chipmm-hmmput that in a little ranch mmm oh mygoodness that’s really good tomorrowI’ll be doing pulled pork in themeantime watch me work
