How To Make Roasted Beetroot Salad With Chicken Recipe
This easy roasted beetroot salad is a perfect side dish for grilled chicken. Roasting concentrates the deep, earthy flavour of the beetroot turning it into a vegetables that stars in this roast beet salad. Enjoy making this dish!!
All you need
pepper 1
oil
beetroot slices 2 cups
onion ring 1 cup
garlic cloves with skin 10
salt & pepper
olive oil 2 tbsp
diced tomato 1
diced cucumber 1
sliced radish 1
chopped coriander 1/2 cup
olive oil 1 tbsp
salt
sugar 1/2 tsp
mustard paste 1 tsp
balsamic vinegar 1 tbsp
iceberg lettuce 1 cup
For grilled chicken
chicken breast 2
salt
balsamic vinegar 2 tsp
crushed pepper 1 tsp
chilli flakes 1 tbsp
olive oil 2 tsp
Method
Apply oil over pepper and roast in gas stove till it charred. Allow to cool, remove skin and slice it. Apply olive oil and salt to beetroot slices. Heat pan and roast beet root till crispy and cooked. Remove beetroot from pan. Roast onion rings and garlic in same pan. Take a bowl, add olive oil, salt, sugar, mustard and balsamic vinegar. Mix well. Add roasted pepper, beetroot,onion and garlic to bowl. Add raw vegetables except lettuce. Mix well, finally add lettuce, toss well the salad and serve with chicken.
For making chicken, marinate chicken with salt and balsamic for 30 minutes. Heat olive oil and grill chicken till brown on both sides . Add seasoning to chicken breast and serve.
