Howzit Everybody!
Here is a recipe for a food that I first had when I moved to Okinawa Japan. I was 14 years old and had the Summer off, before starting High School. I found a Yakitori vendor, right outside one of the main gates at Kadena AFB.
I found street vendors selling these all day and night. You could smell these from a mile away. (Really!) They usually sold 3 or 4 for $1. So, I ate them pretty regularly. You could find vendors selling Yakitori all over the island.
So, here is my version of Yakitori. I hope you enjoy it!
Yakitori
I used 1 lb of chicken thighs and 1/2 lb of chicken breast.
I also used skewers that I soaked for an hour, prior to cooking.
Tare Sauce
1/2 Cup Shoyu (Soy Sauce)
1/2 Cup Sake
3 Tbs Sugar
Boil for 1 minute then simmer for 5 minutes and remove from heat.

okay for my ingredients i gothalf a cup of soy sauce half a cup ofsake and three tablespoons of sugar[Music]herethree tablespoons of sugarturn this on[Music]sookay i’m going to start to thread myskewers i’m going to start with a pieceof green onion kind of act as a stopperum grab a piece of chicken and justcarefully thread this on top theskewer be careful not to poke yourselfyeahso i’m gonna do one piece of onion andthen two pieces of chickenget them on there be carefuland then another piece of onion twopiece of chicken and then another pieceof onionum i tried to cut off as much fat as icouldthere’s a small amount of fat on herebut that’s okayif you don’t like the fat you can cutoff yourself you know the japanese liketo have just the skin by itself and theyfry that up and put some sauce on itthey think it’s ono soyou know everybody’s got their thingbut here i cut off as much of the fat asi canone last piece of onion and that one’saboutmy first one we’ll get to cooking thoseand the rest ofokay i’m gonna cook these on amedium-high heata little bit of oil in there it’s hoti’m gonna move the oil around a littlebit so i can get on the chickenso it’ll be nice and crispy get thatnice crust on itput this one on the sidegot another big one in the middle andone more on the outside and i’m cookingthese for four minutes per sideokay it’s been about four minutes so i’mgonna check the crust on this onenice little crust i’m gonna flip thisone over yeahall right it looks good too so let mecheck this onesee what it looks like yup that onelooks goodi’m gonna leave the other ones in themiddle the two ones in the middlebecause it’s got plenty of meatit’s gonna take a little longer to cookit’s been these have been cooking for anextra minuteso i’m going to take a look and seewhat’s happening yeah look at that crustnice and brown let me check the otherone as welloh yeah that’s the oneokay now we’re going to take our tare orour sauce that we made earlieri’m just going to brush this on each onego each piece is going to get a littlebit of the saucelet that cook for a minute just makingsure all the rest of them have sauce onthem tooand after i get all the sauce on themi’m going to let this sit in the pan forabout another minuteand that’s going to help to thicken thesauce upand so it’s also getting sauce on theother sideokay i’m going to flip these guys overand i’m just going to let them sit inthe saucein the pan for about another 30 secondsand that’s ityou’re done[Music]okay i’m gonna get the mushrooms and theonions in the pani’ve got a little bit of oil in here ona medium heatget all of these in here and just get anice dark brown color on thesei’m gonna cook these for about fiveminutes per sidei like mine done about like this cookthem a little longer if you like[Music]okay let’s get the plating so i’ve gotsome rice over hereso i’m going to of the skewersgot the yakitori with the green oniongrab one more put it right next to itlet’s grab this one that’s the oneoh don’t we don’t let me forget aboutthe mushroom and the onionsokay i’m gonna put this one right in themiddle yeah that’s the oneokay now i’m gonna take my potato saladit’s got a little bit of carrothard-boiled eggchoco mayonnaise lots of mayonnaiseokay and then i’m gonna garnish thiswith a little bit of the green onionokay gonna take some put it right on topmypotato salad a little bit of my rice andpow and that’s itokay so here’s my plate i got twoskewers of the yakitori with green onioni got one skewer with the mushroom andthe onionsi’ve also got some rice and some potatosaladwith a little bit of green onion on topand that’s it
