[Music][Music]hey guys Chris with Nicolas retirementEmpire and today I am your special chefmy chef now I’m a special cook oncolored belly cooks and we’re gonna makesome crispy chicken wings this is myarea of expertise is chicken anythingwith frying or if it was like friedchicken so I’m going to show you how tomake them now these will be that kind ofwings that are crispy at the end thatyou put directly in the sauce and eatokay you don’t cook cook them with thesauce on so I’ve got about eight wingshere I’m going to cook these in the airfryer the first thing I’m going to do isI’m going to put just a little oil onthem okay now you can spray all on themif you want to but that’s just olive oilokay let’s say I’m going to use my lefthand here and I’m gonna make sure thatall these wings have all of them so Itake I put a little layer of oil on allof them and then I seize it on with myseasoning now you can just be you saltand pepper if you want whatever kind ofseason you want to use but I’m justgonna make sure that I get some of thisnow I like about this amount Tami doesnot like them with as much seasoning onthem as I put on and this is seasoningthere’s a little bit that’s a little bitof bite but it’s not too hotmatter of fact it’s not really hot atall to me okay so I’m gonna put this onall of these and what I will do is Iwill take all the drum it’s and I’llcook them the way that I cook them andI’ll take all the wing what do you callthose the win yes I guess I don’t knowwhat you call those I’ll tell you theother parts and I’ll cut it in the wayTimmy cooks them okay now I have to takean egg which won’t hurt to touch it withchicken hands because I got to wash themanyway and then I’ll come back and I’llput some milk in there and stir that upso I’ve got one deck in here which isreally more than I need but you knowcan’t have half an egg so I’m gonna mixthese up okay that should be good setthat over here with my chicken all rightnow the first let’s do the first oneslike I do it okay so I take the oil theseasoning then I come over here and I doa little egg wash and remember these aregoing to be in the air fryer and then Ido a light dredge with self-rising flournow you can cook these in the deep fryerif you want to oh you cook them in theoven if you want to we like to use ourair fryer it works really good for thisI’ll make sure I don’t have too much ofthat egg on there and we do leave ourskin on for our chicken wingsusually when we actually fry chicken bigpieces boning chicken we take the skinoff and it works out really well withthis egg wash that we like to use butwhen we do our chicken wings we like toleave that skin on there okay so all ofthese will be the way that I make themall right now boy Tammy makes them takethat out of the equation you just takethe oil and the spices see a littlenaked spot right there okay anyway youjust take the oil in the spices lightdredge so you’re saving time you’resaving a step and you’re saving some ofdishes that you have to clean up solight ingredients light dredgethat’s a weird-looking one it looks likea drum yet but it’s a no you know whatit is a drum in we’ll have to keep aneye on that one okay light richnow there’s hers there’s mine all rightI’m going to I’m going to preheat my airfryer our air fryer is a kasoori it hasa preheat set so I didn’t preheat andplay or start not play it’s going to runfor five minutes and getting preheatedif yours does not have a preheat set youcan just turn it on 350 or 400 orwhatever and run it for five minutes andthen that that’s your preheat you don’thave to do that but we think that makesa little bit of a difference in ourchickenall right now that five minutes does acouple of things for you besides heat upyour microwave or besides heat up yourair fryer okay it allows you to takesome time to be able to clean up yourmess I’ve already been able to put upall my dishes and everything okay westill got two minutes left on the timerallows me to wipe everything down andclean everything if you’re dealing withchicken the other thing it does is itallows your chicken to sit there and getready anytime you put chicken in an airfryer or a fryer and you put flour on ityou really want to give it really about10 minutes now we’re only going to giveit five but you want to give it tenminutes and by the time you put it inthe air fryer or the fryer it shouldlook wet okay and you can see thischicken is starting to look wet we stillgot a couple more minutes but that helpsmake that crust a little bit crunchy erwhen you do it that wayall right our timer went off so it’spreheating so I’m going to take this outand I’m going to put you can hear itsizzle a little bit when you put it inthere so I’m going to put the drum Xover here on this side and I’m going totake the ones we did Tammy’s way putthem over here on this side okay andthen about halfway through this processI’m gonna flip these over but ourkasoori has a preset for chicken has alittle chicken leg there so the presetfor chicken is at 384 25 minutes well Iwant to do 35 minutes so I’m gonna hitmy time and we are turning it on okay sohalfway through this process I’ll turnit over now if I see when I turn themover that there is flour on it like itlooks like the flowers is staying whiteon the outside of it sometimes thathappens I’ll take a little spray sprayoh and I like canola oil you know andI’ll spray that on there and thenthat’ll make sure there’s none of itswhite okay that’s a little tip for youwe’re halfway through the cookingprocess here so see what I was talkingabout with that flour if you see thatand you can just pay you know some Pannarelease or something like that spray iton there and they’ll make sure you don’tsee that okay so we’re gonna flip theseover and you can see they’re lookinggood already I mean this makes somepretty chicken wings some very crispychicken wings they’re just deliciouslet’s see make sure it just actuallyturned over and I did take this and washthis with so because this is the sametongs that I’ve turned them over we haveto put them in there with so remember ifyou’re handling chicken make sure youwash these with soap before you use themagain all right so I’m gonna put themback in there and let them finish up Igot 16 more minutes all right guys it’sbeen 35 minutes and these are crispydone now these are the ones that Tammythe way that she doesn’t so here’s ourplate of chicken wings now this is whywe like to use the air fryer okay youcan see the amount of grease that cameout of that chicken all right I do nothave a lot of grease to clean up I canput this straight in the end the sinkget some hot water on it clean it up andthis cleans up really easy so that’s whyI like to use that air fryer I don’thave a bunch of grease to dispose up nowall right so let’s look at these wingsnow let these rest a little bit nowthese are the ones that we make likeTammy likes themthese are super crunchy and they haveall this crust on them just like a pieceof fried chicken okay all right I’mgonna take a bite of that one you’regonna hear it crunch and that is juicyand crunchy so when I cook these wingslike this I’ll just leave them like thisI dip them in my sauce I put them in myranch and I eat them that way because Ilike them to be crunchy here’s the onethat I did with the egg wash okay solet’s take a bite of it it is actually alittle the skin is a little less crunchybut all these little things on the sideare more crunchy they’re super crunchyit’s a little more tender on the insideof the wing but it’s still just as juicyokay so both of these are crunchy andcrispy personally I think these have alittle more flavor that have the eggwash but these are more crispy andcrunchy without the egg wash so both ofthese are this is a great way to makechicken wingsyou just wait to the very end to dipthem in your sauce and you’re gonna havea nice crispy delicious chicken wingwithout a real big mess to clean up andwithout all that Bowl to get rid ofwe love cooking them in the airfryertaking Tammy’s spot in Colorado cookswe’re even I can cook like mama did soif I can do it you guys can takeI’m gonna use mob nowuse my special seasoning that we use forour fried chicken today so I’m going toshow you how to mix that up we have thisin our volume 2 cookbook I believe it’sdivine to CVC volume 2 so I’m going toshow you what all I put in it and I’mgoing to use a teaspoon and that shouldbe enough to fill up my my shaker that Iput it in ok so it’s the way I rememberit is it’s 2 to 1all right to salt to paprikaokay so that’s to paprika to salt okay -pepper – pepper to paprika – solid nomatter what you’re using if you’re usinga tablespoon a teaspoon a cup howevermuch you’re making it’s two to one okayso two paprika too soft one black pepper[Music]one white pepper and if you don’t haveany white pepper you can use the blackpepper but they do taste different so Iwould recommend getting some whitepepper okay so one white pepper onecayenne okay seven to two oneI know that’s probably not how you’resupposed to do it but I promise I’mgonna get it mixed up good okay okayand that’s enough makes that amount inyour shaker so that’ll be plenty forseveral batches of chicken before Iremix it so if you used a tablespoon itwould probably fill it
