Indian Masala BBQ – East African Street Food Style BBQ – Spicy Chicken Wings – Lamb Chops – Kebab

All recipes inspired by our Gran, originally Gujarati, Indian, born and raised in Mogadishu, Somalia, Married in Aden, Yemen and finally settled in London, England. A fine combination of cultures & a fusion of flavors!

Chicken wings and lamb chops:
Red chilli powder : 1 tea spoon
Coriander powder: 1 & 1/2 tea spoons
Garam masala : 1 tea spoon
Salt: to taste / recommend 1 & 1/4 tea spoon
Tandoori powder : 4 full tea spoons
Fresh garlic : whole bulb
Fresh ginger: large thumb piece
Fresh green chilli : depends on spice level but around finger chillies
Small bunch of fresh coriander
Yogurt: heaped table spoon
Lemon juice fresh or bottled: 1 table spoon
Optional red powdered food colouring
Vegetable oil: around 5 table spoons/ adjust as necessary until smooth paste is made with all ingredients
Blend in a mini chopper the garlic, fresh chilli, ginger and coriander and mix with rest of dry ingredients

Lamb Kebab :
White onion: x1 (chopped finely in a electric chopper)
Garlic : x6 cloves
Ginger: large thumb piece
Salt: to taste (1 tea spoon )
Fresh green chilli: depends on spice level ( 4-5 finger chilli )
Coriander powder: 1 & 1/2 tea spoons
Garam masala powder: 1 tea spoon
Turmeric powder: 1 tea spoon
Large bunch fresh coriander
Oil 1 table spoon
Blend all fresh ingredients in electric chopper to paste and add to dry ingredients with lamb mince mix with hand to combine evenly
