huh they’re so good suck my thumb[Music]hi I’m sandy and I’m going to show you aquick weeknight dinner with all theflavors of a summer barbecue the beansthe slaw and the barbecue chicken andI’ll bring them all together in one BowlI’m just gonna start by heating my oilhere in the quick cooker so I can get myonions sauteed for the barbecue sauce soyou’ve probably heard of Buddha bowls orgrain bowls or even smoothie bowls bowlmeals are just so popular but I lovethis idea of a dinner and a bowl becauseyou can fill it with fresh colorfulfoods and they’re really fun to eat thebest part is that if you love barbecueflavors but you haven’t made barbecueyourself this is a pressure cookerversion only takes about 30 minutes I’mgoing to show you just how easy it is tocome together so I’m starting with athree ingredient barbecue sauce in myopinion it’s really the star of therecipe I’m just gonna start by preppingmy onions I’m gonna go ahead and slicethem in this simple slicer and it cutsthem into the perfect sizes okay justgonna give these a little cut in half sothey’re a little bit more manageable inmy sauce my pan is nice and hot I’mgonna add a little bit of salt this iswhat’s gonna help draw out the moistureof these onions and help get them reallycooked and release the flavor – so theseonions you could see are just startingto change color you could cook theseonions for about 20 minutes and get themtotally caramelized to add even moreflavor to your sauce but just sauteingthem for a couple of minutes adds niceflavorso I love a barbecue sauce it’s sodelicious but it can have a lot of sugarnow to me making your own barbecue saucejust makes me feel really cool and thisone is so simple we just have about acup of ketchup we’re gonna have someapple cider vinegar and some smokybarbecue rub Plus those onions that aresauteing and it’s that easy now I lovethis sauce because you don’t have topremix it in a separate bowl I’m justgonna add everything to the quick occurand stir it all up so I think theseonions are looking good I’m going to addmy cup of ketchup I’m gonna add atablespoon of the smoky barbecue I’veactually tried our smokethe Apple would rub with this recipe toowhich also works great but I really likethe extra tang and the barbecue rub andthe to see spoons of apple cider vinegarso with pressure cooking all the steamin the pot really locks in all thoseflavors especially in this barbecuesauce and makes it that much moreflavorful I’m going to add just a half acup of water this is gonna help createmore steam and pressure so thateverything cooks and then I’m gonna hitcancel and start prepping my chicken soyou can use chicken thighs or chickenbreasts in this recipe but personally Ilove chicken thighs they’re tenderthey’re hard to overcook and they’regenerally more affordable than chickenbreasts you don’t even have to seasonthese thighs at all because all theflavor from the sauce seasons themperfectly so now I’m going to prep mybeans I have a can and a half of blackbeans right hereso since canned beans are alreadyprecooked I’m really just warming themup in this recipe I did rinse thesereally well to get off some of thesodium so I’m just going to juice somelime right into the beans it’s such aneasy way to jazz them up without addingany extra sodium and put them in the potwith a chicken so I’m just cooking it onthe chicken and poultry setting forseven minutes so first I’m gonna startwith my dressing for the coleslaw I’musing the creamy dressing that’s righton the bottle of the measure mixin pourbut I’m just gonna swap the red winevinegar with apple cider vinegar sincewe used it in the sauce so I just havethree-quarters of a cup of Greek yogurtthis is a really classy creamy dressingthat’s gonna go great with the slaw andpair nicely with the tangy flavors ofthe barbecue sauce okay then I have 3/4cup of buttermilk and I have atablespoon of that apple cider vinegar Ilove that this dressing is right on thebottle so you don’t have to memorizeanything and I have a teaspoon of Dijondigit on mustard is my favorite gives alittle kick to dressings and sauces alittle bit of salt and we’ve got abouttwo teaspoons of sugar a little bit ofpeppergive this just a little shake it’s goodto goso I love using just three prep bags ofcoleslaw it’s just so easy and you cancustomize them too if you want to addmore vegetables like more carrots ormore cabbage they’re really just a greatblank canvas so I have about a can ofpineapple tidbits it’s sort of anunexpected addition to this recipe but Iknew I really wanted to add pineapple tothe recipe and I just couldn’t find agood place to add it and I thought whynot add it to the slaw and it actuallyworks really great you drain the juicefrom the can because you don’t want towater down the dressing the pineappleactually makes this law really morebeautiful adds a little pop of color andnice texture so cilantro is actually oneof my favorite herbs I love it so muchit adds so much freshness to so manydifferent recipes I’m using just about acup of cilantro for this slaw now withcilantro you don’t have to be perfectwhen you’re picking the leaves off thestem if you get a couple stems in themix it’s okay they taste fine andthey’re not gonna hurt you oh thiscilantro just adds the right amount ofcolor to this law makes it even prettieryou only use about a half of thisdressing keep the rest for later this issmelling so fresh I can’t wait to try itwith the chicken so avocado is optionalin this recipe but honestly I love toadd it to just about everything avocadoslook really good you know when we createrecipes it’s not just about the flavorit’s a lot about the presentation andthe different texture it’s really fun toadd different garnishes to make thatplated recipe a little bit more specialso now that the chicken and the beansare ready I’m going to go ahead andpress cancel and release the pressureI’m gonna remove this chicken to a bowland just chop it up it’s okay if you getsome of the onions in there it’ll getnice and chopped okay then I’m going toturn my quicker Curtis ear so I canreduce the sauce and thicken it upyou’ll be glad you use chicken thighsI’m telling you so when the chickencomes out the sauce is still a littlebit thin so I’m going to cook it alittle bit longer on the sear setting toreduce it so reducing just means tothicken and really intensify the flavorof a sauce or a liquid just think aboutit the longer that you reduce it themore water evaporates and the moreconcentrated the flavor becomes andthat’s really what we want in thisbarbecue sauce so whenever I bring thismeal home which I have done a couple oftimes I tell my husband we’re havingbarbecue chicken and then he asks is itthe barbecue chicken and he gets superexcited my son actually likes to eat itwrapped up in a tortilla which is greatabout this recipe you can reallycustomize how you want to serve italright that’s looking pretty thick justgonna hit cancel add my chicken back inokay so let’s serve this up I love thatpeople can really customize how theyserve this bowl you could have more slawif you want but it all looks so prettywhen it’s put together the star of theshow so good the top of my avocado sowhen I started creating this recipe Iactually had this all served on a bunwith the slaw and the beans on the sidewhich again you could do cuz it’s soeasy to customize I mean look at that soeven though I’m not a big gorilla orbarbecuer this barbecue chicken recipemakes me feel like I can bring someweekend cookout vibes to a busyweeknight
