we’re gonna do it very simple andinexpensive but tasty cook today sowe’re breaking out the pit-boss todayand we’re gonna smoke out some chickenlegs going to get these drumsticksgo on I’m gonna use this duck fat in acan for the binder so I’m gonna get bothsides of these guys all oiled up andonce that’s done we’ll get the seasoningon themall right so they’re all good to gotherewe’re seasoning these guys with thisOakridge secret edition pork and chickenrub and we’re using it because it’sgoing to give a good flavor but alsogood color so I’m gonna get these guysseasoned huh all right I’m gonna do thispretty generously because I want them tohave good flavor good color all right sothese guys are looking pretty good withthe seasoning so we’re going to get themover to the pit box and get them goingall right so we’ve got the pit box setat 250 degreesand we’re using cherry palates today getthese guys on here they look really goodone more guy that’s kind of heavyalright guys closed up alright so it’sbeen about an hour these guys aren’tdone but we are gonna miss them up I’vegot this mango juice and water you canuse apple juice you can use orange juicethis is just the juice I had on handwhich we are gonna miss these guys upand then we’re going to close them backup for about another 20 minutes so I thechickens finishing up I’m gonna makethis blackberry jalapeno glaze so we’regoing to start off by turning thissucker on and I’ve got some chickenstock here it’s about a 1/2 a cup I gotsome Grand Marnier it’s a half a cup ofthat and then we got blackberriesthere’s a full cup of blackberries inhere we’re gonna get these blackberriesheated up so we can get all the yummygoodness out of them look at these guysheat it up so it’s been about threeminutes and the blackberries haveliquefied they’re condensed down we’regonna go ahead and strain them nowall right so the reason why I’mstraining this is because I don’t wantall the blackberry seeds in the sauce Ijust want to have the actual juiceitself right so I’m going to try to getas much juice as I can out withouthaving the seeds themselvesI want all the flavor without all theskin I guessall right so we’re going to add in onejalapeno and then in this I have I’lljust put all the one thing to King so Ididn’t have so many jars so I have twotablespoons of soy sauce I have twotablespoons of honey one tablespoon ofmolasses and one tablespoon of whitevinegar and then two tablespoons ofchili sauce all that in there all rightblade in there I forgot to put in allright all right so it’s all good it’sall blended up so we’re ready to go it’sbeen 30 more minutes and these guys areprobit at 168so we’re gonna get them glazedI wish you could smell this placebecause it’schicken is pretty too I like the colorof italright so I’m gonna get these guysturned over and then we’ll get the sideglazed up as wellit’s been 30 more minutes in the last 15minutes I turned the heat up to 300degrees you get that skin really crispywe’re gonna get these guys off so we cando success so the total cook time was alittle over two hours it’s time to giveit a taste and of course Jeff shows upnow I like chicken legs he likes chickenbreasts better true all rightwhich one you getting this one okay cuzit’s in the middle right and this is allwe’re allowed to do finger food on thisright uh-huh people say oh my gosh theseare almost as good as a chicken legs Imake yeah right I made itokay Oh crikey I don’t know how wellthat comes up in the videothese are definitely definitely juicyget a nice smoke you got some kind of ohit’s a jalapeno that’s a few I tastesome kind of spice sweetness from theblackberry what else you put molasseshoney what was it honey molasses mmmchili sauce food raw awesome if you’renot already a subscriber please hit thesubscribe button and click on the back[Applause][Music][Applause]
