hi I’m Dan Cooper I work with Webber UKas their head grill master I’m here atmy house and we’re still on lockdown andlike everyone else we’re trying toinject a bit of excitement into theireveryday so in this video we’re gonna dosomething extra special we’re gonna behot smoking watermelon and also somebeautiful chicken wings on the BBQ solet’s get going today I’m cooking on myGenesis 2 I’m preheating it on anindirect heat so the two burners on theoutside are on a medium to high heat andwe’re preheating the cook box but alsothe smoker box that I’ve got inside I’musing Applewood chips today Applewoodchips are nice and subtle and sweettasting whereas the hardwood chips likeHickory much stronger much more fierceso I’ve soaked these for 20 to 30minutes and now they’re ready to go intomy smoker box I’m just going to open thelid and we’re going to add about twogood handfuls of wood chips into thesmoker box I’m doing this with Tom isit’s pretty hot so we closed the lid ofthe smoker box closed the lid of thegrill and we’re going to let that reallypreheat for about 30 minutes or untilyou see a lot of smokedeveloping from the smoker box it’sreally important to only put food in thegrill once you’ve got lots of smoke inthere and that’s how you’re gonna getthe best flavor result on your food I’mgonna start by making the rub so we’vegot one and a half teaspoons of Chinesefive-spice I got two teaspoons of garlicgranules we’ve got one teaspoon ofcoriander seed I’m gonna finish thatwith a really good pinch of black pepperand sea salt crystals so we’re justgonna give that a little combined mix itall together that’s now ready for themelon and the chicken next we’re gonnaput the rub onto the chicken wingsremember how versatile this rub is youcan put it on loads of different meatsand vegetables and it brings thatwonderful Asian taste to whatever you’recooking so I’ve got some olive oil I’mjust going to drizzle a little bit ofolive oil over those chicken wings andthen mix that in my bowl and then I’mgoing to add half of the rub onto thechicken wings reserving half for theMedal which I’m gonna do in a minute sonow it’s really important just tocombine that rub onto the wings so we’regonna put those to one side and I’mgonna get on with my melon so take asharp knife cut that in half and look atthat color absolutely beautiful so wewant to actually take the skin off sousing a sharp knife revealing thatbeautiful red flesh underneath now oncethe skin has been removed I want toscore it really only into the top of themelon and this is gonna help a nicecrust form on the outside and it’s gonnatrap lots of flavor there it is so nowwe’re going to cook the melon on alittle vegetable basket I’m just gonnaexactly like we did with the chicken addsome olive oil and this oil here is tohelp the rub stick to the melon and thenwe add a great dusting of that lovely 5spice rubis ready for the barbecue it’s been 30minutes and the smoker box is now reallygoing look at that you can see it isdelivering a lot of smoke into mybarbecue so right now it’s key to getthe temperature of the grill right we’relooking to cook between 130 degrees and150 degrees that means I need to turnall the burners right down to a lowsetting so we’ve just give these cookinggrates a really good clean off before weput any food on them so we’re gonna addthe chicken wings indirect so in themiddle of the grill and these are goingto take 1 hour to cook on the barbecuenext we’re going to add the watermelonwhich will take exactly the same amountof time to cook as the chicken so we’llpop that lid down and let that get onwith the smoking if you’re using acharcoal barbecue it’s just the sameprinciple you cook indirect the onlydifference is you don’t need a smokerbox you put your wood chips directly onthe coals and they’re going to start todevelop smoke almost instantly while thechicken and the melon are smoking I’vegot plenty of time to make my glaze I’mgonna do it on the side burner of myGenesis and it’s going to take me aroundfour or five minutes so to a pan I’mgonna add some sesame oil ginger honeynow for the hoisin saucefinally I’m gonna add soy sauce and softbrown sugar you just want to let that toreduce for about two or three minutesand then that’s gonna be ready to basteup the chicken wings and the melon it’sbeen one hour since I put my wings andmy melon on so it’s now time to glazethem with that beautiful voice in glazelet’s have a little look oh those smellabsolutely delicious you get thesmokiness of the wood smoke with thatlovely Asian spice and the idea ofglazing it and carrying on cooking it isthe glaze is gonna caramelize slightlyand go all sticky and really sink intowhat you’re cooking and now we’re gonnamove on to the wings just making surethat we’re coating them all over withthat delicious sticky glaze they’ve hada further 20 minutes on the barbecuefrom when I glazed them so thatwatermelon is coming off on the boardand now we’re gonna take the wings offthese wings gonna be so tender but alsobecause we’ve given them that extra 20minutes on the barbecue they’re gonna bequite crispy on the outside I’m gonnatake these in now put some garnishes onthe chicken wings and on the melon andthen serverabsolutely delicious so I’m just gonnaprepare the melon it’s really got thetexture of tuna and once you actuallycook it with all the rub and theseasonings it takes on a real savoryflavor I’m just gonna add a little bitof olive oil and sea salt and that it’sjust a stunning dish and really reallydifferent I really hope that
