I welcome back to New England firecooking I’m Erin Higgins and today Iwant to show you guys how I do wings onmy weber kettle what I have here is Ihave a little over 30 wings I think Icounted 34 wings on this tray I justpicked these up from acquaintancesmarket place in downtown westerly andwhat we’re gonna do is we’re gonnaseason these we’re gonna get them on theWeber Kettle using what’s called avortex essentially what it is is acommon it’s a stainless steel comb thatyou put your charcoal leg and I guessyou could say it enables you to air fryon your grill every single time I cookwings on the grillthe skins never exactly how it is whenyou get a nice basket of fried deepfried chicken wings in front it doesn’tget have that crisp to it and apparentlythe claim on these is that this vortexcan help you do that on the grill so Imentioned to give it a shot but before Ido I want to get these seasoned so we’regonna season these chicken wings with aFrank’s redhot buffalo branchrub and I’ve used this a couple timestastes pretty good it’s the closestthing I could find to an actual buffalorub you can season with whatever rubyou’d like but in this house buffalo isking so we’re gonna be putting a niceeven coat of seasoning over these wingsdon’t go to too crazy you still want totaste some chicken[Music]same story on this side[Music][Music]okay guys we got this vortex going niceand hot and now it’s time to get thesewings on now guys before we get thesewings on as always make sure you giveyour grill grades a dose of cookingspray and what you want to do is youwant to get them on the very outside youdon’t want to set them over that vortex[Music]okay guys as always we want to add somesmoke flavor so what I’m gonna do so I’mgonna set some of this Hickory rightdown on top get the cover on I’m gonnagive it a few minutes and I’m gonnarotate it you want to make sure that yourotate this exhaust every couple ofminutes around the clock and usually youknow you go from 6 o’clock to 3 o’clockto 12 o’clock to 9 o’clock just to makesure all these beans are cooking evenlycome back in about 10 minutes we’ll giveit a rotate and we’ll check on thesewingsok guys these wings were looking reallyreally good now we’re gonna do we’regonna give them a little bit of a flip[Music]now that we got them flipped we’re gonnaset this up one more time exhaust at thenine o’clock position depending on howyou’re looking at this okay guys theseare looking awesome getting real closeto sauce in time I’m gonna spin this onemore time and I’ll put in the exhaust ofthree o’clock position and we’re gonnalet it roll for a few more minutes andthen any time of sauce okay you guys asyou can see these are looking reallyreally goodwe’re gonna give all these a flip andthen it’s time to give them a sauce tosauce these wings we’re going to usingthe Franks red hot wing sauce and it’sthe buffalo flavor you can use whateversauce you’d like and if you want to cutdown on the amount of heat just cut itwith a little bit of melted butter nowit’s time to get some sauce on these badboys[Music][Music]okay everybody so I’m taking these wingsout front there’s a crew of people thathave been drinking all day and they’regonna be doing the taste test of winningyeah here we goall right now what I’m gonna do is I’mgonna have the champs you’ve beendrinking all day test the wings and letme know what they think give me yourfeedback guys let me know what you thinkhow many can we have got a crunch to itso the skin is crispy juicy it’s greatit’s not you know it’s not that deepfried crispy which I like but it’sit’s a natural crispy awesome greatlyawesomethese guys are wish and they could havesome right now okay guys so here I amyou obviously saw how the taste testwent out front but now it’s not officialuntil I do it so before I dive rightinto this let’s do a quick run-throughof what we did what we did was we havethese wings and we seasoned them withthe Franks red hot buffalo ranchseasoning we seasoned both sides andthen we fired up the Weber Kettle gotthose nice hot coals right inside thevortex replaced the grates and then welaid all these chicken wings out aroundthe outer perimeter and then we – somehickory chunks we set it right on top ofwhere the vortex was gave us some nicesmoke flavor altogether I would say wecook these things for about close to anhour maybe a little bit less but everyfew minutes about every 10 minutes or soyou make gotta make sure you rotate thelid of that weber kettle right towardsthe end of the coke after our last flipwe sauce these with Frank’s redhotbuffalo wing sauce so now what I’m gonnado is I’m going to give this a shot andI think I’m gonna go with this bad boyright you know a little drumstick ofcourse you have that some blue cheeseonce againin this house Buffalo was cakeWowdad dad dad I’m making a mess of myselfI don’t even carefires in the front yard that had beendrinking all day we’re right juicycrispy it’s tangy[Music]beats pulling right off the bone orMohawk with heartbeat are exactly Wowlet’s go wait right there ok we don’ttake my word for it take theirs[Music]I’m going back in now stopping even geta flat this time that skin looks socrispy yeah looks really really goodright there that’s such a nice lookingwing a little bit easier on the Lucchesethis time this is the real test[Music]pull the whole thing just about cleanoff Jeffery’s between the bone I thoughtI’d take me too long[Music]All Things Considered just grab a thingit’s in your beardmy wife’s telling me Annie done howl offhereAll Things Considered guys vortex is atotal win if you have a Weber Kettleinvest in the vortex I think it was like40 bucks it’s a really a simple devicewhich enables you to Emily and bang outsome awesome awesome chicken wings evenif you just get the vortex for chickenones alone it’s worth it totally worthitthese chicken wings are my new numberone new number one without a doubt yougot a ton of smoke flavor talk charflavor the buffalo flavor you know yougot some crispy skin it’s awesome it’sawesome this is perfect for football orfootball forget football any gamedayrace daily you name it any game day whenthis is a win doesn’t take very longit’s not an all-day cook somethingthat’s really really easy there’s not alot that goes into it any game day anybirthday party any stag partyand a 4th of July party any
