Vortex Chicken Wings on Weber Kettle Grill

This is the only way to make chicken wings! Using my Weber Kettle with a Vortex set up for indirect cooking. These wings come out delicious every single time in just one hour of cooking! Start placing your separated chicken wings in a brine using Kosher Salt, Onion Salt, Chile Lime seasoning, and garlic powder for at least an hour. The salt will help bring all the juices out of the bones and make it very tender. Once you got your fire going, be sure to crack your bottom vents, and open your top vent fully. Place your wings in a circle like fashion as you can see in the video. After 15 minutes of cooking, you need to rotate your cooking grate by 90 degrees. After a total of 30 minutes as elapsed, your wings are ready to be flipped and rotated another 90 degrees. At 45 minutes you can now baste them in a BBQ Honey glaze! I like to combine my favorite BBQ Sauce (Trader Joe’s Organic Kansas City), a tea spoon or two or honey, and a little more of the same seasonings. Whisk it all together and glaze it over half of your wings, or all if you prefer we don’t judge! After 10 minutes flip the BBQ glazed wings, and glaze the other side. After 5 minutes you are ready to serve! Please Enjoy this meal with your family and friends!

hello everyone welcome to anotherepisode of Kafka’s grill and chill todaywe’re going to be making everyone’sfavorite vortex chicken wings I promiseyou everyone is gonna love these wingsthey are just amazing every time andbecause we’re using vortex it does sucha high indirect heat that the skin stayscrispy it almost tastes like it’sdeep-fried but you’re making it on agrill so it’s much healthier option solike and subscribe please check thedescription I’ll have a link to where Igot my vortex setup and you can getyours so I’m gonna go ahead and show youwhat we’re gonna do I brined the chickenso I like to use the Costco party wingsthe organic pack they’re just you knowthey come in six individual littlecontainers I just popped two of themopen and we’re ready to go basicallyjust put them in the mixed bowl I liketo do a little lemon pepper seasoning Ilike to do these kosher salt you can useyour favorite salt as well salt is thekey here what we’re gonna do isbasically get it all salty and brine itand all the juices from the bones aregoing to come out and just make thisvery very juicy this is one of myfavorite seasonings here treated Ruth’schili line it goes really good onchicken and also treated resign installthis stuff is not just you knowsalt it’s amazing it’s really good onlike with sour cream as a dip it’s goodwith everything this is just garlicpowder here also Trader Joe’s you canuse whatever you like and we’re going tojust this please toss these around alittle bit[Music]we’re all set put it in the fridge forabout an hour hour and fifteen minutesokay guys while the chicken is briningthey’re almost finishing up I’m gonnaget this fire started as you can seetoday I’m going to be using jealousdevil came recommended by my friendPatrick and we’re gonna give it a shottoday it looks really nice you can tellthem that every bar gets going I like toplace the vortex aroundhere just therein your vertical[Applause][Music]so basically as your fire gets going youwant to go ahead and place your cratedown and off if you haven’t already andget ready to put the wings down so onething I want to say when you put thecharcoal down you don’t want to pack itall on the bottom that restricts the airflow you want to leave it as naturallyas possible that way there’s grooves forthe wind and to create that vortexeffect you’re trying to get with yourweber kettle so yeah we’re almost readyabout another five minutes or so letthis break down and we’ll start puttingthe wings down so let’s start placingthe wings we want to go skin-side downhere and go all the way around[Music]also please be sure to open your top netand like a quarter of the way on yourbottom bed just so you get that air flowand circulation that you’re looking forso 15 minutes has elapsedoh and just rotate these 90 degreesthat’s it okay so we’re going to be atthe half hour mark as you can seethey’re getting nice and smoky we’regonna go ahead and start flipping themand you can see that skin is just niceand crisp oh my god anyway to eat theseand you can see I mean if you eversmoked wings that looks just like somesmoke please and that’s what exactlywhat you’re doing hereand directly cooking them we had to makesure that you rotated another 90 degreesand so now that another 15 minutespassedwhat you want to do is mix up yourfavorite barbecue sauce a little bit ofhoney and I’ve put a little bit of saltin that onion salt mixture and go aheadand coat half my wings with it and theother ones I’m gonna just basically tossthem and an onion salt and some more ofthat chili in line after 10 minutes goahead and look at that skin it’s justlike Chris we want to go ahead and flipthem all and baste the other side on ourbarbecue ones[Music]after about letting the sauce developfor about five minutes in the heatyou’re done as you can see we can goahead and pull them what I like to do isjust put in the the driver of there andjust toss these wings right up these areready thank you so much for watchingplease like and subscribe and enjoyeating these meals with your familieshave a great day[Music]
