[Applause][Music]gets ready to cook tomorrow I’ve cutthem all in half cut all the excess fatoff pulled off the membrane and now weare gonna go ahead and soak them in ourmarinade overnight for 24 hours and whatthat basically is is orange juiceI’ll let it sit in there overnight for24 hours we’re not going to really spiceit much okay we’re going to put a littlebit of pepper Rica not a whole lot Ijust like a little something-somethingin there seems like in my experiencethat paprika really gets in there withthe orange juice a little bit of blackpepper you’re also gonna put a littlebit of chili powder chili powder reallygives the pork a good flavor paprikareally gives pork a good flavor andblack pepper it’s really all I’m gonnaput in here the ribs are not verypliable okay this is before theymarinate when we take them out tomorrowafter marinating you could touch theminto end we’re all set now we’re justgonna cover them up put them in thefrigerator and let them sit for 24 hoursovernight right so now we’re gonna cover[Music]all right so it’s the next day and we’regonna go ahead and get our dry rub readyto put on the ribs got the fire goingoutside it’s just about perfect so we’regonna put this dry rub on these ribs andget them put on the pit all right brownsugar chili powder onion powder saltplaque cracker[Music]a little bit of cumin bring a little bitof this strong stuff paprikaand cayenne pepper be gentle of thatlittle bit goes a long way and one ofthe main ingredients to a good dry rubwith ribs is dry mustard lots of drymustard pick a fork and mash all thoseclumps down from the brown sugar get itall stirred up and Sons this a helprubbing it together gets all the clumpsout that brown sugar it’s more moisturein it and it balls up okay so we pulledout the ribs from the orange juicemarinade overnight and you can see thatthey turn kind of a bit gray but that’sfrom sitting in the marinade remember Ishowed you how pliable they wear theyonly bent about like that much now lookat them you can pretty much touch themwith no effort and all they’re sopliable and tender now all right so justwant to take it and sprinkle it rightover it and just rub that in all oversaw is that in the meat whip it over anddo the same thing for each slab of ribsuntil they’re all cut evenly all rightso all the ribs are patted down with thedry rub it’s time to put the ribs onwe’ve got our temperature in between 225and 250 so readythe smaller ones you want to put furtheraway from the fire the bigger ones youwant to put a little closer up to thefire alright so we got the ribs on andwe’re ready to go we’re gonna cook theseon a three one one we’re gonna trysomething differenttypically do that three two one I’mgonna do only one hour covered in foilinstead of the two hours because I’m notgonna go for the fall off the bone ribsthis time I’m gonna go for more of thecompetition style rib that’s you knowyou get a clean bite on so we’re gonnaexperiment see how that goes all rightso it’s time to wrap up I’m gonna getthese babies wrapped up then I keep themwrapped for an hour this timedid you see how they’re already comingoff the bone you’re not even donecooking you want to wrap them real goodtightso all right so we’re gonna put them onthe pit and let them run for an hour allright so we’re gonna go ahead and takethem off pit unwrap them put them backon the pit glaze them with some barbecuesauce and let them go about I’m gonnasafety because of the way they’relooking for because depending on howthey look we’re gonna decide whetherwe’re gonna go another hour to could beeven less than that we’re gonna see it’sa lot us although Johnny[Music]look at that bomb falling out look atthat bone fall out that’s why I thinkwe’re probably just gonna go another 30minutes maybe an hour when you marinatethem in the orange juice man thatacidity breaks down the muscle andtenderizes that meat so good that ittakes less time to cook these ribs I’mnot going for falling off the bone ribsthis time I want a clean bite I thinkyou’re gonna accomplish it put them backon and then we’re gonna baste them withsome barbecue sauce you want to put thebig ones down here the thicker onescloser to the heat put the smaller onesdown here at the back of the heat sothat they can kind of cook evenly thebarbecue sauce fronting both sidessmells delicious meat smell-a-visionhoney[Music]we have a nice fire out here we’re justrelaxing Jason’s cooking and this is myspot here so I’m prompt my feet upso what’s Alisa doing while Jason’scooking relaxing let’s meat it must needit relaxing I’m getting smoked out overherebut now I’m just sitting relaxing justenjoying spending time with Jason gottahave some good food YUMall right so we’re gonna pull it offwhat’s done to me we got some sausageand the ribs are looking pretty good sowe’re gonna go ahead and pull now andfor side dishes we have a pot of bakedbeans over here and then my mother madea corn casserole and she said told theboys to come pick it up it’s covered incheese and mmm and for dessert my momalso made pineapple upside-down cake forJason’s birthday[Music]it’s time to slice the ribsyou wanna follow the bone[Music][Music]yes backOh[Music]how did I do darlingperfectly clean bites juicy anddeliciousjust the way barbecue should be oh mygosh yes and then we just have a simpleside dish of beans and then my mothermade this corn casserole so it’sbasically like cornbread with corn in itand then topped with cheese it’s reallygood yeah it kind of looks like mac andcheese what do you think Colby youhaven’t tried the rib yet huh oh yeahyou’re eating the ribs right now how arethe ribs did dad do good relative easeI’m not try the beans yet and I’m gonnatry that I want to go get all the thingsfor alright so you don’t do barbecuesauce with your ribs you’re not a Dipperno I’m a Dipperoh they are don’t need the barbecuesauce huh just like there all rightthumbs up so Karen had to finish thisvideo
