[Music][Music]everybody coyote Joe here alright ontoday’s show yes I’m live in the jacuzzicuz I’m gonna be cooking out backnothing says out back like the jacuzzianyway on today’s show we’re gonna showyou three simple things the first thingis we’re going to show you how to make abarbecue rub that you can use onanything and it’s a fantastic spice justto have around the house you don’t haveto have the exact right ingredientswhatever you have will work we’re alsogoing to show you how to fire roastgreen chilies and we’re gonna show youhow to cook ribs stick around we’regonna have some fun this is a basic 4 to1 row okay so there will be four timesas much sugar in this as there is saltnow if you don’t have brown sugar that’swhat I’m using it’s a nice flavorblender you can use white you use acombination of white or brown you canuse monk fruit sugar and you can trysome sugar substitutes if you want andif you don’t have any sugar at all butyou have honey you can make this withhoney it’ll be a little odd to get onthe ribs but you can still rubbing itI’ll be fine so we’re starting out withour brown sugar we have 1/4 as muchkosher salt now when you’re using saltthis is a very large grain salt it’snice for roasting if you have to usetable salt cut it way way down becausethe smaller the granule of the salt thesaltier it will taste and this willimpart a nice roasted flavor withoutbeing overly salted to that we’re goingto add some black pepper same amount aswe have of our salt now we’ve got aboutthree times as much chili powder let’stalk about chili powder now the onlything I had in my house was on Cho chilipowder if you’re not going to do this ona charcoal grill that has some mesquitein it or some sort of wood flavor if youdo it on a gas grill you can add insmoked paprika or if you got Chipotlepowder or any smoked chili flavorany chili that you have will do the jobI’m using ancho you can use paprika youcan use mild New Mexico red it doesn’tmatter so this is our basic rub theproportions don’t have to be exact asyou make it you may go I didn’t need allthat sugar in there or you may goI’d like a stronger chili flavor justadd a little more take some notes onceyou get it all mixed up this rub will befabulouson beef chicken even on fish it’s greaton pork really really want to go on porknow at this point for myself I like toadd a little bit of Mexican oregano andI use granulated garlic if you’ve gotminced garlic garlic powder I don’t carewhat you have right now if you want toadd some garlic added in to your tasteI’m using about is a third as muchgarlic and about a third as much oreganoas I’m using salt and pepper all rightthere’s our basic rub now that we’ve gotour rub done let’s talk about pork alittle bit when I went in the store theother day the only thing they had leftwas sausage and pork ribs so I grabbedsome now maybe you’ve got a pork roastand this will work on any pork pork loinpork shoulder whatever you’ve got butI’ve got ribs so let’s just get themgoing now we’re gonna take some of ourrub you’ll notice here that I’ve putdown a little bit of saran wrap orplastic wrap down on a baking sheet it’sjust better to work with I do the backside first because the back side reallydoesn’t impart as much flavor but I likethe color and there’s a little taste init’s kind of nice and remember don’t useyour whole bowl of rub put your hands onthe pork and put it back in just pull alittle bit out and this is also fabulouson chicken if you’ve got some leftoverand you’ve got your grill lit or youheat it up your oven you might as wellroast a little chicken or a little beefor whatever you’ve got laying aroundokay I’m just gonna tap this on here I’mnot really gonna rub it in hard now alot of folks really insist on rubbingthe meat in what I do is this processwhere I just get it tamped on to itbecause in both cases what you’relooking for is to get the flavor driveninto the meat now you can do thisno mint the next step you can just golike this right here tap this on herelike this this will be just fine youwill love it they’ll be fantastic ribsyou won’t believe how good they are andsometimes when I’m gonna hurry I do thatbut if I’ve got the time this is thenext step for me I take and get enoughplastic wrap if I couldn’t do this I’mgonna pull this up like this and wrapover here and I’m gonna wrap like thisand just wrap it up just like it’s inlittle envelope and what happen is ifyou let this sit in the refrigeratorwhen you come back all of this will havemelted in they say that the sugar worksas a vehicle to penetrate the meat andit drags the salt and other flavors inand the sugar helps to caramelize sojust like that just like that all rightI’m gonna pop this in the fridge now I’monly gonna pop it in for 20 or 30minutes it really is best overnight lookat the ribs right now you can see thatthey’re all wet and gooey that’s becausethe rub is just worked its way into themeat take that off and set it right onthe grill off of the flame indirectly iswhat we’re looking for now well that’sstart roasting excuse mewell that’s cooking we’re gonna startroasting our green chili these righthere are long Anaheim green chiliesyou’ve seen them before we’re gonna poura bunch on the grill just cook themuntil they’re nice and blister on theoutside let me move this ahead wait asecond I thought I saw a bad one inthere where was it here it is wait forold times sake all right I’m throwingfood good people asked about that allright this is right here we’re gonnatake and keep an eye on these chiliesand as soon as they’re all the waycooked we’re gonna put them back in theplastic bag that we got at the store andwe’re gonna take and throw them on thecounter I let them just steam but wewant a nice and dark brown on both sidesthe pork will cook indirectly this is ababy backso it can be cooked a little faster alittle higher temp if you’re usingspareribs pull it further off the heatlow and slow is the rule for spareribsthe baby back ribs can cook these willcook probably in about Oh an hour hourand fifteen minutes okayonce our chilies look nice and brownedlike this you’re gonna take them and putthem back in the plastic bag bring theminside and they’ll look like thisthey’re gonna sit for about 20 minutesand all that heat from the grill staysin the bag you can see steam all overthe bag and I was taught how to do thisdown in Mexico and it works so good andif you’re funny about this bag use aziploc bag you can also put them in abowl and put plastic over the top but atthis point you’re just gonna grab achili and if you look the skin justwants to come off if you’re doingbunches of these one you can wear glovesmom used to the heat but your if thechilies really really hot your fingerswill get really really hot but just likethat see and then we’ll just take andpeel all these and this is one of myfavorite side dishes we love a bakedpotato a mesquite grilled steak and somegreen chiles it’s also wonderful withfire roasted corn all right well let’srecap with the barbecue rub it’s a basicfour to one rub you can use any Chili’syou have and add your own flavors andremember if it’s too sweet or too saltyjust adjust the salt or the sugar itdoesn’t have to be perfect it’sfantastic on any protein it’s also greatin beans it’s good on tofu if you’re agrilled tofu person it’s also wonderfuland other dishes like rice and whateverit’s a great spice to have around andwith the ribs remember you don’t have tocook these outside if you’ve got acharcoal grill I love that flavor yougot a gas grill cook indirectly and ifyou’re gonna cook it inside your oven athome I would cook it at about 350 and Iwould start looking at them at about onehour you can turn them now and then justto make sure they’re not sticking andjust make sure they tighten up and thebone protrude out just a little bithey well thanks for stopping by and Iwant to thank all of you than puttingcomments on my Facebook page
