Pulled Pork Potato Skins on the Silverbac
Here’s the deal, I love pulled pork, I love potato skins, so why not have both!! These were the best of both worlds!
***What You Need***
– Fully Cooked Room Temp Potatoes
– Some Pulled Pork
– Cheese of your liking
– Jalapenos
– Chopped Green Onion
– 1/2 Cup of Mayo
– 1/2 Cup of Sour Cream
– 1/2 Cup of Your Favorite BBQ Sauce
– 1 Ranch Dip Pack
Of course for this recipe you need some baked potatoes. You can use left over or cook them the day before to make it easier. I didn’t have any prepped so I cooked up a few in a 400 degree oven for about an hour. Removed from the oven and allowed to cool. It makes scooping the potato out so much easier if the potato is cook and easy to handle.
While to potatoes are cooling I took the left over pulled pork out of the fridge. I placed what we needed into a heavy duty ziploc bag and added a little bit of Killer Hogs Vinegar Sauce to it. Placed in the microwave for 30 seconds at a time and toss it around every 30 seconds until it was warm. Warming up pork this way keeps it from drying out and does change the flavor at all.
Once the potatoes have cooled, we took a knife and halved them. Used a large spoon to scoop out the filling. We left a little potato around the edge to help the potato hold up to all of the pulled pork goodness.
We seasoned each potato skin with salt and pepper before filling. You can fill them with whatever you would like. We used a big helping of pulled pork, bbq sauce, cheese and jalapenos.
We cooked these potato skins on the https://grillagrills.com/ Silverbac. We filled the hopper with some https://bearmountainbbq.com/ Cherry pellets. For this recipe we ran the pit at 275 to slowly melt the cheese and get that good smoke flavor.
***The BBQ Ranch Sauce***
Combine the following Ingredients….
– 1/2 Cup Mayo
– 1/2 Cup Sour Cream
– 1/2 Cup of Your favorite BBQ Sauce (Killer Hogs The BBQ Sauce)
– 1 Ranch Dip Pack
Once the cheese is good and melted on the potato skins we brought them in and topped the with the BBQ Ranch Sauce and a couple chopped green onions. The look and smell so good!
These potato skins are almost a meal on their own! They were so good and the BBQ Ranch turned out great!
Give this a shot and let us know how you like them!!
