Viet Southern Salad Recipe – Grilled Pork over a Rice Noodles

Viet Southern Salad Recipes – Grilled Pork over Rice Noodles

The first time I ate Vietnamese was when I first started dating my wife. Nancy was a much more adventurous eater than me. I really didn’t care for it. Actually… I hated it. 😂😂 But I kept trying it and I slowly grew an appreciation… and now it’s one of my favorites.

This dish is called Charbroiled Pork with Noodles at most restaurants. Before we had kids, Nancy and I used to live down the street from a Vietnamese restaurant called Vi’s. Walking distance from our apartment. Vi’s called it Southern Salad… and that’s what we still call it. 😋😋

*** Full disclosure… this dish is time consuming. It is easy to make, but it will take time. You should try to do the prep the day before. The end result is worth it though. The meal was delicious and dirt cheap.

I’ve used the marinade on pork skewers, pork chops and large shrimp. If you’re in a rush, just make the protein and eat with a side of rice and a salad. I’ll make a separate video with the “easier” menu for those with crazy schedules.

Enjoy!!

Ingredients (serves 5):
* 2 lb pork shoulder or pork butt (Winco sells a nice 2-3 lb pack of pork carnitas meat. This works perfectly!)
* 4 TB minced shallots
* 3 TB minced garlic
* 1/2 cup sugar
* 2 TB fish sauce
* 4 tsp soy sauce
* 4 tsp black pepper
* 4TB avocado oil (veggie or canola is fine)
* 1 package rice noodles
* 10 egg rolls (I used pre-made frozen lumpia. You can buy this.)
* Wood skewers

Seasoned Fish Sauce Ingredients:
* 3/4 cup water
* 1/4 cup sugar
* 4 limes (juiced)
* 2 garlic (minced)
* 2-6 thai chiles (minced or sliced)

Night before…
1. Slice pork into thin strips – 1/4” to 1/2” inch strips (that can later be threaded on skewers).
2. Mince shallots and garlic. Mix with sugar, fish sauce, soy sauce, black pepper and oil.
3. Marinate overnight.
4. If you’re marinating pork chops as well, tenderize first.

Make the seasoned fish sauce…
1. Mix all ingredients together and refrigerate overnight. You can either mince or slice up the thai chiles. I prefer mincing so you don’t bite into a chunk of pepper. Thai chile is very spicy!! 🔥🔥

Pickled Carrots/Daikon Ingredients:
* 1/2 cup julienned daikon
* 1/2 cup julienned carrots
* 1 TB kosher salt
* 1/2 cup hot water
* 5 TB sugar
* 1 cup water
* 4 TB vinegar

Pickle the daikon and carrots…
1. Julienne the daikon and carrots.
2. Toss with salt and let it sit for 15-20 minutes.
3. Prepare vinegar solution by dissolving sugar in hot water, add water and vinegar.
4. Layout a couple sheets of paper towel and put the daikon/carrot mixture on there. Squeeze all liquid out.
5. Place daikon, carrots and vinegar solution in a jar and let it pickle overnight.

Toppings for bowl (all are optional):
* Green leaf lettuce (chopped)
* Mint
* Persian cucumbers (sliced)
* Pickled Daikon & Carrots (recipe below)
* Fried Scallions (recipe below)
* Crushed peanuts
* Seasoned fish sauce
* Thinly sliced jalapeño.

Fried Scallions Ingredients:
* 1/2 cup sliced scallions
* 2 TB oil

The day of…
1. Soak wood skewers in cold water (prevents from burning).
2. Slice up cucumbers.
3. Chop of lettuce.
4. Rip of pieces of fresh mint.
5. Prepare rice noodles (simply soak in boiling water for 10 seconds).
6. Fry egg rolls per instruction.
7. Grill the meat. Grill skewers around 3-4 minutes per side (cover between flipping). Grill chops around 5-6 minutes per side (cover between flipping).
8. Fry the scallions over medium heat for about 5 minutes, stirring frequently.

To plate the Southern Salad Bowl…
1. Lay a handful of lettuce on the bottom.
2. Grab a good handful of noodles and place on top of the salad.
3. Place 1/4 cup of cucumbers on one side of the bowl.
4. Place 2 TB of the picked daikon/carrots next to the cucumber.
5. Place a few pieces of fresh mint next to the daikon.
6. Place meat on an empty spot of the bowl.
7. Spoon some of the fried scallions on top of the meat.
8. Sprinkle a handful of peanuts on top of everything.
9. Spoon 2-4 TB of seasoned fish sauce over the bowl.
10. Add sriracha to taste to make spicier. Add sliced jalapeño for even more 🔥🔥.

Budget $13 as shown in video (without pork chops):
Pork $4 ($2/lb at Winco)
Rice noodles $3
Veggies $2
Daikon/Carrots: $3
Other sauces: $1

We have the basic staples of Asian cooking… fish sauce, soy sauce, etc. Your grocery bill might be slightly higher if you’re buying these for the first time.
